COMMERCIAL DESCRIPTION
The “Old Time” series is a collaboration with The Charleston Beer Exchange. The base beer (a Belgian-style strong dark ale) for all four Old Times was originally brewed in July 2011, then aged in a variety of oak barrels, some with and some without a blend of brettanomyces, lactobacillus, and pediococcus.

Brandy Old Time was aged for 18 months in three Laird’s apple brandy barrels without any wild yeast/brewing bacteria.

Tap at Copenhagen Beer Celebration 2013 - Session 1. Pours clear, red-brown with a tight, tan cream head. Rich, deep aroma of ripe fruits, bread and toffee. Big sweet flavor with rich sugars, toasty bread, dried fruits, toffee. Full bodied with fine, creamy carbonation. Moderate warmth to end, very sweet, lightly syrupy, with candied fruits, bread, some further toffee. Big and ballsy. Heavy stuff but I was really into it.

On tap @CBC13. Hazy dark brown with off white head. Aroma sweet and heavy, malt, rye, caramel, oak, dark fruit and bourbon. Flavor is rich malt, caramel, vanilla, chocolate, dark fruits and alcohol.

Draft. A brown beer with a lazing tan head. The aroma has notes of roasted malt and alcohol. The flavor is sweet with notes of alcohol, caramel, roasted malt, and wood.

Keg @ CBC 2013. The pour’s deep rusty red with a small head. The nose is rich mashed apple. A bit of brandy. Figs, red grape, caramel. Forest fruits and christmas cake. THe taste is rich stewed apples, spice. More fig and plum. A bit of hot cinnamon on the finish. Mildly boozy. Full body, a real sipper. Overall, quite interesting.

Draught @ CBC. Pours slightly hazy dark brown with a offwhite head. Aroma of heavy sweet malt, rye, caramel, oak, dark fruits, bourbon. Flavor is rich malt, caramel, vanilla, chocolate, dark fruits, figs, plums, alcohol. Full body, smooth and creamy mouthfeel, light warming alcohol. 040513

Draught @ CBC2013. Pours hazy dark wooden brown with a big frothy goldenish brown head that slowly dissipates while leaving some thick lacing and trace on the glass. Smell is sweet and maly with sweet dark bread. cookies, brandy, charred wood, raisins, figs, prunes and hints of coconut and alcohol. Taste is sweet and malty with caramel, biscuits, sweet dark bread, charred wood, coconut, brandy, raisins, figs and dates. Mouthfeel is soft, smooth, roound and near full bodied. Finish is sweet and malty with sweet dark bread, biscuits, caramel, wood, vanilla fudge, roasted coconut and brandy. Very smooth and tasty...
