Happy birthday to us! To celebrate our first year as a brewery we brewed a serious imperial stout and aged it on cocoa nibs, vanilla beans, cinnamon sticks, and fresh habanero peppers. This is the first offering in our annual Anniversary series. Here’s to many more!

Pours engine oil black with a tan head that retained nicely. Aroma is Dark cocoa, flourless chocolate cake (my wife’s observation), grated cinnmon stick and vanilla. Thick sweet mouthfeel. Dark rich fudge chocolate start with vanilla followed with a dry fresh cinnamon flavor, not a sweet cinnamon but a spicy freshly grated cinnamon stick flavor. Some spicy pepper notes in flavor along with dark espresso. FInishes with a nice dark chocolate flavor and as the flavor disappears from palte the heat from the habanero lingers and intensifies a little. Not super hot but you know its there. This was a beautiful, complex, unique brew.

Nearly black with lingering dark brown head. Aroma of rich flour-less chocolate cake and gram crackers. Just of hint of the spice aroma. Starts very dark roasty malts and dark chocolate cake, finish is spicy hot and chocolate. There is a significant amount of heat in the finish, not too much, but enough to complement the chocolate. Lived up very nicely to the hype. Thanks Dan for sharing this one!

Pours pretty thick and black with a thick mocca head. This looks like the stuff. Aromas of roasted coffee, dark chocolate, vanilla, marshmallows, caramel malt and some fudgey notes to is aswell. Taste is very dark roasted coffee, vanilla, marshmallow, some date-like notes and some sweet chili notes aswell. Has a dry roasted chocolate finish with some very warming chilies. This beer though!

Brutal! Negra con buena corona de espuma beige que desaparece poco a poco. En nariz el chocolate da paso al frescor del coco y la vainilla. Buen cuerpo. Entra un poco amarga pero rápidamente da paso al chile, que toman presencia y hace que no se note el alcohol. Cervezón!!

Keg at the Copenhagen Beer Celebration 2014, red session. 03/05/2014. Aroma spices, cinnamon, cake, sweet caramel, nutty malts. Some hot alcohol in the nose as well. Flavour is full cakey,spices, back of the throat tingling spices with caramel sweet to balance. Things are all in balance, but the spices are prominent. Palate is full bodied, sweet, melts in the mouth. Nice.

Bottle @ gmellison via trade. Rating #9,000. Deep brown appearance with a thin dark brown head. A bit chalky, dark chocolate, light coffee, vanilla, roasty nose. Definitely some pepper spiciness in the mouth. Somewhat gooey chocolate brownie flavor. Some cinnamon and pepper and vanilla. Some more peppers on the finish. Maybe a touch thin. More peppers and a thinner body than Abraxas. Enjoyable but nothing legendary.

22 oz bottle given to me by Kenny at 3 Floyds, many thanks my friend! Pours a deep viscous black with light barely passing as black cherry red on the rim only. Aroma is complex - huge roast and chocolate, cinnamon, vanilla and big habanero notes. Flavor is roasted malts and bitter chocolate, coffee bitterness, and a warming alcohol note, though alcohol isn’t overwhelming. Full bodied, silky mouthfeel, active carbonation. Delicious.

Sample at Tap & Mallet in Rochester. Brownish-black pour with a medium foamy tan head that diminishes gradually to a film. Partial rings of lacing on the glass. Aroma of roasted malt, dark chocolate and peppers. Full-bodied with flavors of chocolate malt, habanero and oaky vanilla. Slight sweet spice in the background. The finish is mildly peppery with a dark chocolate and charred malt aftertaste. Not at all over the top which is a plus, good beer all around.

2014 Bottle; Pour is murky dark brown / black with a prototypical khaki head into this glass. It retains fairly well, with modest lacing presence into this glass. The nose is bittering hops (pine), with heavy cocoa nibs and chocolate cake presence. There is clear cinnamon and light vanilla notes here - but the habanero is barely visible, so to speak. Its just a hint of vegetable - The flavor profile reveals a more malt dominant piece, but I was expecting something more cigar city, and got something more balanced and subdued. I suppose that’s both bad and good, because I find cigar city to be masters at malt driven brews. Cocoa nibs move to more pine driven hop notes - I found brown sugar and cinnamon presence, which moves to a fairly thick mouthfeel and a nice, overall imperial - light vanilla and the habanero dissapoints. They emphasize a quick sampling of it but I feel like 3 months should do the trick - I think I was expecting more out of this one.
