Happy birthday to us! To celebrate our first year as a brewery we brewed a serious imperial stout and aged it on cocoa nibs, vanilla beans, cinnamon sticks, and fresh habanero peppers. This is the first offering in our annual Anniversary series. Here’s to many more!

Great stuff, and definitely a mexican cake vibe. Mix of vanilla, light chile and cinnamon. Kind of like mole sauce. Lots of roast. Black motor oil pour with good head and lacing. Caramel sweet and bitter finish. Bottle from brewery.

Bottle sample at a tasting at Tom L place. Thanks Tom. Opaque black with brown head. Sweetish aroma with notes of date honey, chocolate and vanilla. Flavor of chocolate, quite hot (habanero), coffee, vanilla, wood, some spiciness, alcoholic. Oily texture, full-bodied. Complex and pleasant, great.

Bottle: Poured a pitch-black color stout with a nice large brown foamy head with good retention and some lacing. Aroma of black chocolate notes with roasted malt is pretty nice. Taste is a nice mix of roasted malt and black chocolate with some residual sugar notes, some cinnamon notes and some spicy peppers notes which really only become noticeable in the aftertaste. Body is quite full with nice creamy notes and good carbonation. Solid imperial stout thought spicy notes becomes a bit too much for my liking.

At a tasting, many thanks, no head, treacly thick pour, opaque black color, cakey malty flavor with chocolate coca and a hint of something burned, chocolate flavor with toasted bread cinamon some earthiness and a lingering mellow habanero spiciness, extremely mellow and beautifully balanced. Excellent sipping stout.

2014 bottle shared at MechaGodzilla. Big roasted cacao nib nose with vanilla and cinnamon notes all over the nose. As it warms a slight bit of prune comes out but the spices are the stars and pair with the cacao well. This is sweet on the palate, but not overly so like so many in the style. More vanilla as it warms, but the cacao stays at the forefront. Slight spicy cayenne pepper finish but reigned in and matches perfectly. 2 years aged has definitely toned the sweetness down. Loving it!

Bomber. A good and overwhelming imperial stout thats low on soy sauce. I think the one thing that sticks out a little is the spiciness from the pepper. Very minimal bit certainly adds to the complexity.

CBC 2013 maybe from a bottle someone brought in. Pours black with an off-white head. Quite sweet with a light bitterness. Malty aromas of chocolate with hints of toffee and rye. Also aromas of dates and hints of pepper. Full bodied. Medium carbonation. Dry finish.
