COMMERCIAL DESCRIPTION
This traditional Flanders-style sour red ale was aged for 2.5 years in red wine barrels. It is named in honor of a very energetic cardinal who used to fly around the outside of the brewery during the first half of 2011 when this beer was originally brewed.

Hands down, best beer I've had at Westbrook. And they make really good beer. It's a waiting game making this tasty beverage. Grab it before it's gone like the bird it's named after.

Bottle to glass, deep brownish red body with a thin off white head. Nose is tart cherry with lots of oak earthiness. Taste is a perfect sour oaky cherry with a great presence of red wine must and a contrasting bright fruity finish. Outstanding sour.

Draft at Westbrook. Reddish brown pour. Aroma is oak, some fruit, and tart notes. Nice medium body with lively mouthfeel. Flavor is exceptional; very rich with the oak coming through nicely adding an awesome level of depth with the subtle red wine notes. Expected a very dry finish, but actually finishes very balanced. This is exceptional; not too sweet, very complex, and drinkable.

Bottle shared by Max at Clocking New Year. My fav of day. Pours reddish brown with nice head. Nose is red wine, berries and vinegar. Tastes of zin, berry preserve, vinegar, leather, and wood. Nice tartness and mouthfeel. Lovely

Pours brown with a hint of red into a snifter. Aroma of sour cherries and a little funk. Red wine in the background. Very tart on the front end of the taste, finishing with a sweet wine-like finish. Delicious. A little carbonation that does well to emphasize the sourness. Fantastic sour.

Smakprov på CBC 2014. Smak och doft av trä, äpple, vinäger, honung, sirap, karamell, fat och röda bär. En bra flamländsk rödöl med mycket karaktär från rödvinsfaten. Bra syrlighet, frisk och bra balans mellan smakerna. Mer av detta tack!

UPDATED: MAR 15, 2014 Pours a beautiful hazy ruby red with a very small off white head. Lots of bright red fruit on the nose, raspberry and cranberry, some balsamic acidity, a little bit of oak, and lots of tartness. Lots of oak on the taste, lots of tart/sour berries, balsamic vinegar, red wine, and a leathery musk character on the finish. Not bad, the flavor seems to fall off quickly and it could use a lot more carbonation. Overall, it’s not too sour, the oak wine barrels add a nice extra layer of complexity, and it’s pretty refreshing.
