This beer, inspired by the flavors of Southeast Asian cuisine, is a twist on the classic Belgian witbier style. Instead of the traditional coriander and orange peel spicing regimen, we add fresh lemongrass, ginger root, and a dash of Sorachi Ace hops. The result is a wonderfully refreshing ale with notes of lemon candy, citrus fruit, and a slight spiciness from the ginger. Best served at 45˚F in a tulip or wine glass.

Daft served in a pilsner glass Had a deep luminous golden quality with a pure white fluffy head - stunning appearance. Enjoyable wit distinctive lemon and ginger notes.

Poured into a snifter. 3.25 A: Mildly hazed golden color. Two fingers of pillowy off-white head. Retention is a touch below average and a short ring of lacing is left. 3.5 S: This smells a lot more like a traditional witbier than I was expecting. Crisp wheat and spicy peppery yeast are predominant. The ginger is subtle with the lemongrass and sorachi ace (which is basically more lemongrass as far as Iím concerned) being more potent. More herbal than a normal witbier. Overall pretty good, but I wouldnít call it an improvement over the usual. 2.75 T: The taste I donít care for much and I know why. I really hate sorachi ace hops. It tastes like lemongrass and plastic. While the nose didnít have much of the plastic, the taste surely does. The ginger is stronger, which I like. Otherwise peppery spiciness and neutral wheat. 3.25 M: Lighter medium body. Good moderate carbonation. On tap at Fermentoren Aarhus. Pours a hazy yellow with a soapy white head. Aroma has corn flakes, wheat, ginger, esters, spice, clove, banana. Taste is malty sweet, wheat, again some corn flakes, soap, vanilla essence, smooth, odd spicy and slightly hoppy. Average carbonation and a smooth, light body.

12 oz. can, consumed on 12-29-15. Belgian aroma. Scents of lemon, lemon peel, bison grass, vanilla, lavender, and orange peel. Strong and interesting smell. Not a normal beer aroma. The sweet floral quality may be a little too much. Pours a clear, highly effervescent, deep gold with a moderate amount of off-white head. Yeasty cloudiness in the final pour. Looks cool. Flavors of ginger and lemongrass. Belgian yeast taste. A bit of dry bitterness. Floral, herbal taste. Pretty good. Not as sweet as aroma implies, and thatís probably for the best. Light to medium body. Soft in the palate. Decent and interesting beer overall. Probably donít want to drink a lot of it, but nice to try. Well made.
