A strong, dry and spicy trappist ale. The product of a secondary fermentation lasting 5 weeks.

750mL poured into a snifter. 4.0 A: Hazed light to medium yellow. Nearly three fingers of frothy white head with good retention and loads of lacing. 4.5 S: Good spiciness going on here. Plenty of clove and black pepper with some other unidentifiable spice in there tying things together. Hay, lemon rind, and green apple. There’s a general earthiness and a moderate amount of yeast. Pretty good! 4.0 T: Clove and pepper again. Sweet maltiness, peach and wild apple, hay and and earthy funkiness, and a good helping of yeast. Surprisingly bitter for the style, but is welcomed to even out the fruitiness. 3.5 M: Medium body. Carbonation is a bit higher than I’d prefer, but okay. Carbonation is active, but not quite to the "spritzy" level I like from a good Belgian beer. Goes down easy and leaves a footprint of both bitter and sweet in the aftertaste. 4.0 D: Good beer. I like the earthiness of the Trappist beers that seldomly manifests in the American counterparts. No flaws with a good complexity. Serving type: bottle Reviewed on: 02-28-2011 00:04:40

Quite foamy and fizzy. Had floaties in it (not that that’s a bad thing). Initial tastes weren’t great, but as I drank the bottle, it grew on me.

11.2 oz bottle. Hazy orange color with a small amount of white head. Smells very floral and spicy - taste is slightly bitter with a defined belgian yeast.

Floral aromas combined with yeasty bready aroma. Pours hazy golden yellow. Pillowy tight white head that lasts. Sweetness at first with warming alcohol. Some honey and peppery spicey notes as well. Strong bread malt flavors. Very richly carbonated. Overall very enjoyable.

Cloudy orange with a huge white head. Aroma is sweet fruity, yeasty and spicy. Flavor is medium sweet and fairly bitter. Smooth with a dry, bitter and spicy finish. Warming alcohol. Very good Tripel. 240810

Pours into an straw colored cloud with a massive head. Very dry with some floral notes. Nicely balanced beer, it’s hard to believe it’s 10% alcohol, but not to my taste.

Cloudy golden body, huge white head. Yeasty, citric and spicy aroma. Light alcoholic palate, interestingly quite bitter taste, dry finish.
