A strong, dry and spicy trappist ale. The product of a secondary fermentation lasting 5 weeks. This is a complex ale with a fruity aroma and a nice nuanced hop scent. It is soft and creamy in the mouth, with a bitter touch carried by the fruity aroma. An exceptional ale, with a great deal of finesse and elegance, and with a splendid long after taste.

12oz into chalice. Pours a very slightly opaque golden colour, thick fluffy white head, lively carbonation, some sediment. Light hop and moderately fruity aroma; tangy flavour of light citrus, slight bitter astringency in the finish. Not as stellar as I remember, but still a very pleasant beer.

Overall one of my favorite tripel beers. Deep yellow color with white foam. A little bit fruity and malty smell. Rounded, creamy tast, but strong. Leves the sweet and a little bit fruity taste. Strong but drinkable

Hazy amber gold with big fluffy head that sticks around and leaves nice lace. Perhaps as a result, the aroma is not pronounced, with grain and yeast predominating. Up front bitterness relaxes into nice balance of bitter, yeast, sweet, bready and slight banana notes. Each take their solos without competing. Slight alcohol heat and bitterness returns for lingering finish. Medium body with creaminess. This is how to showcase hops as bittering agents balanced with the other elements, not to beat your palate into submission. US brewers could learn a lot.

Bottle - very hazy golden with a large clean rocky white head which lasts a good while. Good lacing. Aroma of cloves, yeast, lemon and orange. Taste of marzipan, clove, yeast and hay with a little earth and bitterness in the finish. Some light sourness to complement. Medium body, low carbonation.
