Pours a clear golden colour with a small frothy white head. Aroma is cider like with apples being most pronounced, there is also some yeast and spice present. Fairly sweet taste that becomes somewhat bitter and then finishes sweet again. Nice carbonation and a medium-full body. Overall quite good.

33cL bottle, Trappist Tasting at Joe T.’s. Pours a hazy, deep yellow-golden color; creamy white head with excellent retention and lacing; attractive pour. Pleasant aroma of white pepper, light vanilla, and honey; nicely dry, peppery, and yeasty nose. Medium to medium-full body; lots of creaminess; non-astringent, with some light, vinous, warming alcohol notes; fluffy, lighter texture overall; lots of peppery notes, vanilla, and some soft cloves; definitely yeast-driven presentation, with a bit of Belgian / candy sugar and Pilsner malt at the core; lively, moderate acidity, nice complexity that extends beyond the basic peppery, dry yeasty notes. The vanilla, creamy character here is lovely. Lasting finish of pepper, vanilla, and toasty Pils malt.

33 cl bottle. Beer pours a pale gold color with some cloudinesss to it. Head lasts and nose is yeasty, sourdough bread. Flavor is incredibly complex: fruity (granny smith apple-like), some other fruit tones, closes spicy. Finish is bitter, but not too bitter.

65 cl bottle, Fargo, ND, USA. Cloudy deep golden colour, thin head. Mixed yeast and citrus aroma. Velvety with some liveliness, fresh with a mixed spice and sweet flavor. Very nice finish of cloves.

UPDATED: JUL 6, 2010 Bottle pour to Trappist glass gives murky dark yellow color with great thick white head which is quite persistent. Aroma nice with fruits and spices. Things go downhill after that with average fruit and malt taste followed by bitter and dry finish. A disappointment - there are certainly better Trappists out there.

Rich, orange-gold, turbid tripel with four fingers of frothy, dirty head. Aroma is bread, yeast, barnyard, honey, light pepper, golden apple and spiced pear. Aromas meld into a balanced, sweet, yeasty, full-bodied beer with a smooth, spicy, chewy finish. A superb example of its style.
