A strong, dry and spicy trappist ale. The product of a secondary fermentation lasting 5 weeks. This is a complex ale with a fruity aroma and a nice nuanced hop scent. It is soft and creamy in the mouth, with a bitter touch carried by the fruity aroma. An exceptional ale, with a great deal of finesse and elegance, and with a splendid long after taste.

Pours slightly hazy golden with a massive fluffy head that has superb retention. Smell of sweet caramel and malts, yeasty banana, spices, citrus and honey. Taste starts sweet and earthy, bitter builds up into an extremely long aftertaste. In the meantime, the fruits, citrus, spices and yeast make an appearance. Strong carbonation. Aftertaste is dry, bitter and long. Well balanced. Brilliant trappist beer.

Bottled. Bright yellow with a persistent white head. Aroma is citrus with a little sourness and a spicy yeast character. Smooth, good body and good carbonation. The taste has a notable yeast character with some sourness. The finish is spicy bitter.

A bottle from Jason’s in the basement of 101, drunk at home. Aroma: nice, slightly sour vegetable-like smell. Appearance: slightly hazy, orange-amber, minimally frothy off-white head. Palate: full-bodied, lively carbonation, long, very boozy finish. Taste: very complex, plenty of fruit in there, the alcohol certainly makes its presence known. This beer is a work of art, lovely.

Valeur sûre. Note: bière expirée en avril 2011 dégustée après 5 ans (oubli!). Bonne tenue, le goût a évolué, plus fort et alcool plus présent. A comparer avec une récente.

Espuma blanquecina que permanece como una fina corona, color dorado anaranjado y turbio, aroma intenso en nariz bastante dulce, sabor potente que torna de un sabor afrutado en inicio que se torna en un regusto seco y duradero.

Amber. Malt, fruity notes, spicy yeast, and in the aroma, some noble hops. Very rich, sweet and slightly pungent taste, with a dry and lightly bitter finish. A bit of alcohol, too. Medium body, with high carbonation. Overall, a wonderful tripel, and one of the best. Incredibly tasty, balanced, and still very drinkable.

Bottle. Light yellow, little bit hazy with nice long lasting white head. Yeasty and fruity (citrus) aromas, rather low. Low body, medium carbonated, dry but with light oily mouth feel . In taste also yeasty with slightly acidic / bitter finish and alcohol warming. Very interesting, good and very drinkable for the 9,5%.

Apparence : Dorée, plutôt limpide, quelques sédiments, très gros col blanc mousseux laissant une belle dentelle, effervescence moyenne et moyennement rapide.
Nez : Phénols de la levure belge très dominants (coriandre?), légèrement céréalier, très légers agrumes frais, léger alcool en trame de fond. Intensité moyenne.
Goût : Phénols, phénols et phénols! Je crois percevoir de la coriandre, du clou de girofle et du poivre de Sichuan qui rappelle en même temps un peu le piquant citron.
Sensation : Effervescence moyenne-faible, corps moyen, chaleur d’alcool bien présente, poivré sur la langue, longue finale chaleureuse, sèche à l’amertume contenue.
Bref : Surprise! Après un nez plutôt discret, on a une explosion de phénols en bouche accompagnés de malt bien sucré, d’une amertume en finale et tout ça dans un corps bien rempli pour une Triple. On dirait pratiquement un petit biscuit épicé. Belle exécution qui manque malheureusement de tonus au nez.
