A strong, dry and spicy trappist ale. The product of a secondary fermentation lasting 5 weeks. This is a complex ale with a fruity aroma and a nice nuanced hop scent. It is soft and creamy in the mouth, with a bitter touch carried by the fruity aroma. An exceptional ale, with a great deal of finesse and elegance, and with a splendid long after taste.

Bottled. Pours a big white head that takes up half a tulip glass, then settles to a half inch of meringue. Body is dark yellow with some wit-like cloudiness. Smell is "clean," with a citrus and yeasty highlight. Alcohol is very upfront in the taste, and low level carbonation gives it an asti spumanti feel. Sweetness is vinous rather than malty. As others have suggested on the forums, this may be a hard style to understand. I certainly like it, but I keep expecting more of a "big beer" taste. But with this, I finally got to celebrate Easter with some beer made by monks (Oooh... I coulda had a Salvator, too!)

33cl bottle on 19-Oct-2015. Dark amber with a medium sized tan coloured head. Aroma and flavours if sweet malt, dried fruits, figs and alcohol which continues throughout tasting. Sweet dry finish.

Bitter and dry. Spicy and rubbery flavours. Fresh bottle (2 months from botting time) has a clear hop character; older bottles lose this. A grainy maltiness in fresh bottles develops into a mellow chocolate flavour in older ones. Good beer.

Fruity esters. Slight haze. Honey gold. Dry & crisp. Rather easy drinking for a belgian tripel.

Bottle from Aeon Liquors. A contrast to yesterday’s Avec Les Bons Voeux, here’s Westmalle’s Tripel. It also clocks in at 9.5% but pours a lighter honey gold with a thick foamy head of fizzy white. The aroma is bready, orange with a musty cinnamon-like quality. Full bodied but sharply carbonated with a dry-ish finish. This is much boozier than the Du Pont, it is rougher but that could be due to being a younger bottle. The taste is spicy, a bit of plum and nutty. Nice but not as satisfying as Avec Les Bons Voeux. I do enjoy the spicy/fruity finish though.

I didn't take any extra notes when I tried this beer for the first time but I'm gonna try it again and update my comments. ---Rated via Beer Buddy for iPhone

Light aroma, fruity but hard to distinguish. Pours hazy amber with a nice creamy head. Quite a bitter taste that lingers long.
