A strong, dry and spicy trappist ale. The product of a secondary fermentation lasting 5 weeks. This is a complex ale with a fruity aroma and a nice nuanced hop scent. It is soft and creamy in the mouth, with a bitter touch carried by the fruity aroma. An exceptional ale, with a great deal of finesse and elegance, and with a splendid long after taste.

Bottled. Pours a big white head that takes up half a tulip glass, then settles to a half inch of meringue. Body is dark yellow with some wit-like cloudiness. Smell is "clean," with a citrus and yeasty highlight. Alcohol is very upfront in the taste, and low level carbonation gives it an asti spumanti feel. Sweetness is vinous rather than malty. As others have suggested on the forums, this may be a hard style to understand. I certainly like it, but I keep expecting more of a "big beer" taste. But with this, I finally got to celebrate Easter with some beer made by monks (Oooh... I coulda had a Salvator, too!)

Bottle BBE: 21/12/13 (Aged for 3+ years). Lightly chilled. Hazy golden body with an impressive, rigid, tight white head. Vinous aromas of plum, ripe cherry and raisin. Remarkably complex with the merest hint of sweetness. Dry, but only a gentle bitterness. Bit of an alcohol kick, but no burn. Full, creamy body, with low-medium carbonation. Incredibly long lasting herbal and spicy finish.

Very creamy and very rich, but well-balanced. This beer is extremely drinkable considering the alcohol level.

Hazy orange colour, with an off-white head. This beer has got to have the best smell out of any beer Iíve tasted, with lovely complex aromas of marzipan, raisins, dough and vanilla. Taste isnít as good as the smell, I would rather say watery, with some fruit and spices. Medium body, medium carbonation.
