Assignment by John Vanloo of San Francisco-based Waterloo Beverages LLC to develop & manufacture the Westoek Ale – 6% ABV at & by the Deca Brewery. As this was a very complex recipe to deal with, Deca asked Urbain Coutteau, brew master at Struise to collaborate on this project. 4 grain Blond dry triple ale married to a soft English bitter. Urbain’s Magnum hops for bittering, Styrian Goldings for different aroma hop gifts in the boil, late boil & flame out, Hallertauer Mittelfrueh for dry hopping.

Temptation (220) - - AUG 12, 2013
Very pale, golden and brilliant, transparent aspect, with a small and white head. Looks like a champagne, aided by a relatively present carbonation. Its watery texture and low body plays against it, but its interesting mouthfeel is a goal. Moderately complex (or peculiar), it’s fruity, malty and surprisingly well balanced. It fits the concept between Belgian tripel and English bitter. Interesting, but anyway far from the colossal Struise beers.

Bottled. Pours hazy golden in color with a small head. Fruity notes, some hay and iron in aroma. Light bitterness, sweet ripe garden fruitiness in taste. Feels a bit light perhaps, but then again is quite refreshing summerbrew.

From a 33 cl bottle shared in Durango, CO. Pours a cloudy gold with a massive, fluffy white head. Light dough aroma. Flavors of light butterscotch and citrus. High carbonation and thin mouthfeel. Smooth, crisp finish.

Poured a hazy golden color with a medium sized white head. Aroma was light fruits, some hop notes. Flavor was some bitter notes, sweet malts, light caramel notes. Drinkable.

bootle. pours a golden orange hue with a huge cratered offwhite head. aroma of melon, honeydew, sweet dough, toasted caramel. fine. soft farmy wildflower note. nice. taste is weird twangy watered herb dough. okay. big time carbonation. weird wet herb lemongrass taste is a bit strange. not bad though. good, not great.

Slight hazy, deep blond ale. Aroma is dry malty with refined flowery hop accents and hints of grapefruits. After several sips, your lips and tong become dryer - nice!!!!!

Hazy yellow/blond with bright white head. Nice elements to this. Smooth easy drinking feel of a Belgian blond but with less sweetness and more hop. Nicely bitter.

Aroma is very fruity with some slight phenolics. Pear, apple, tropical fruit, light citrus and some floral esters. Medium light pepper phenolics with a slight plastic character. A touch of honey malt character. Pours a fairly clear gold with a big pillowy white head that is slightly thin and steadily recedes. Medium light lacing and no legs. Flavor starts with a very sweet malt note, slight honey and a bit of pilsner. Esters are moderate with citrus, pear and roses. Bitterness is moderately strong compared to malt character and there is a medium low phenolic note of pink pepper. Mouthfeel is medium light bodied with medium high carbonation. Low astringency and low alcohol warmth. Overall the beer is alright, but definitely not amazing. The malt character is less than amazing but the ester and phenolics are nicely balanced with each other. The bitterness is a touch on the harsh side.

Lot n°25/20/2011, pours golden hazy with a medium white foam head. Typical tripel aromas (yeasty and cereals). Riped apple, honey flavours and lovely hops in aftertaste. Mellow palate, long finish. Good tripel.
