Assignment by John Vanloo of San Francisco-based Waterloo Beverages LLC to develop & manufacture the Westoek Ale – 6% ABV at & by the Deca Brewery. As this was a very complex recipe to deal with, Deca asked Urbain Coutteau, brew master at Struise to collaborate on this project. 4 grain Blond dry triple ale married to a soft English bitter. Urbain’s Magnum hops for bittering, Styrian Goldings for different aroma hop gifts in the boil, late boil & flame out, Hallertauer Mittelfrueh for dry hopping.

Bottle in Bruges hotel room, picked at the Struise shop in town. Clear, dark orange appearance with a cream colored head and nice lacing. Quite floral, a bit musty, tangerine, a bit tangy, fairly spicy aroma. Somewhat bready, cracker, light citrusy, grainy, somewhat floral, quite grassy flavor. Bleh.

My sample was 1.5 years out of date! This beer has a thin, cream-colored head, a murky (which gets murkier, once the bottom caked sediment is swished loose and poured in), tan appearance, some tiny, ascending bubbles, and minimal lacing left behind. The aroma is of sharp, somewhat lemony, spiced holiday bread, dates, raisin, and dough. Taste is of all that, with nougat, caramel candy, and oldness. There is also a noticeable tea-like quality. Mouthfeel is low medium, and Westhoek X finished a bit on the dry side. It’s an odd tripel, but it’s also hard to put down. RJT

Bottle best before 4/2014 poured into a tulip glass: Very cloudy and particulate dark tea color with loads of beige froth escaping the bottle and setting high atop, sticky and slowly dissipating. It’s really not good anymore. Heed the label and pass if it’s expired. Sour, almost vinegar-like and dank funky aromas. The taste is about the same, add bitter.

Goudgeel, kraag verdwijnt tot een laagje. Ruikt zoetig, gistig. Smaakt lichtfruitig, appels,druiven. Weinig diepgang.

Appeltjes en een neut als aroma. Smaak ook appeltjes en druiven met zoetje eromheen. Later wat bitter. Veel bezinksel, geen doordrinker, weinig co2. Gelig troebel.

Odd and I think it. Very light on the palate. Brown sugar and molasses without the heaviness. Floral and some sweet. A bit of haze in the orange brown color. Tap

I tried a bottle which was over a year past it’s "best before" date. That said, this was the first Belgian ale I’ve ever tried that was completely unpleasant. The "very complex recipe" resulted in a very complex mess of a flavor, at least when over a year past expiration. Leather, spruce, and citrus were the predominant flavors, with an almost burnt caramel malt. Most disagreeable. My score would be lower, but I have to make allowance for the past-expiration condition.

330ml bottle bought from a shop in Bruges. Pours a pretty hazy light Amber with cream coloured head that is pretty stable. Aroma is yeast, hops, a little alcohol and pine. Lovely smooth texture. Yeasty, followed by hops. Finish is relatively balanced between sweet caramel and tart hops.

330ml bottle pours out golden topped with long lasting sand head. Nose is sweet caramel belg yeast and bread malts. Taste is more of the sweetness caramel some pit fruit and belg yeast.

Bottle in a hotel room in Brussels. Hazy golden colored with a medium sized white head. Fruity aroma of caramel and hops with notes of spices. Fruity flavor of caramel and hops with notes of brett. Hoppy finish.
