March 2013 - Room temp bottle BBE 08/15. Small head that endures. Makes a crackling sound like Rice Crispies. Dark brown with a little redness when held to light. Mild carbonation. Smells yeasty. Mid to full body, and foamy in mouth. Taste is very mild, malty and slightly sweet, raisin, cardboard. (3.7)

June 2015 -2010 vintage, bottle share thanks to Fergus. Taste is malty, dusty. Mellow, semisweet and drinkable. The extra sweetness just lifted this one a bit. (3.8)

(330ml bottle from Bier Tempel, Brussels, July 28 2015) Pours a lightly hazed deep brown with a small but dense and active tan head and lace. Aroma has a dry and dusty character of yeast and spice cupboard. Caramel malts are light to moderate, dried pale fruits, cooked grains, very light roast, nuts. Palate is light caramel sweetness for style, mineral notes of wet stone throughout, particularly in the finish. Cacao bean, figs, white pepper, walnut and pecan, moderate to heavy dry roast, touches of yeast that stay in the background. Never sweet, it becomes almost bracingly dry on the finish, bitter from roast (and maybe hops) and tannic minerality that sucks the moisture from the mouth and leaves more wet stone behind. Light bodied and edging on watery despite flavour. Soft carb. This is really lovely, not in the same league as a typical "dubbel" type beer at all. It seems drier, flintier, roastier, and with a special character from the yeast. Really it’s only the mouthfeel that is a little underwhelming but there’s the 12 for that! A real sipper despite easy drinkability.

Bue en bouteille de 33cl à la maison.
Couleur rubis/marron effevescence et mousse moyenne.
Nez assez fort sur la levure et l’amande.
En bouche attaque énorme sur la vanille le caramel. Deuxième bouche sur la noisette, continuité sur la levure. Finale en bouche sèche mais avec une attaque sur la levure qui la rend juste sublimement équilibrée.

Bue en bouteille de 33cl. Bière exceptionnelle, la meilleure de la gamme pour moi. Équilibre parfait, complexe à souhait. Douce et onctueuse, arômes maltés et caramélisés. Génial.

Bottle. Pours dark hazy reddish brown with a big offwhite head. Aromas of dark fruits, malts, chocolate, grainy, "øllebrød", raisins, alcohol, caramel. Taste is chocolate, malts, raisins, bread, caramel, belgian yeasty notes.

330cc bottle. Pours dark brown with white off head. Dried fruits, caramel, molasses, raisins. Sweet but with a nice balance. Malty and bready also. Really great. A lot like the XII but watered. Like the second runnings.

These monks are a truly blessed bunch. Pours a beautiful chestnut brown. Mountains of off white head. Aromas of dark dried fruit, dried apple, smoke, a touch of umami. Flavours are toasted malts. Dark fruits. Some coffee. A bit of hoppiness at the end. Fantastic.

Bottle from the monastery, 9 months old. Deepish brown to ruby with a moderate body and a medium, long lasting tan head. Aroma a big surprise, full of dried and dark fruits and fig strongly prominent, more so than I’ve noticed before (due perhaps to its slight age, or the warmer temperatures).
Taste is medium to heavy sweet, with medium bitterness and a light sourness helping to balance things out. Warming alcohol lets you know it’s strong but without overpowering, and the initial yeastiness drops away to leave a dark fruity aftertaste and enough bitterness to prevent any cloying stickiness. Palate is creamy with a very long finish.
This is one to enjoy slowly, with a good break after before getting another beer. Wasted in a session, this is a perfect bottle for those nights where you’re having ’just the one’. Absolute delight, and if you’re UK based it’s well worth the effort of getting hold of a case or two.
