Commercial Description:
Fast on the heels of our fantasticly reformulated Hops Infusion, our brewers have picked up the gauntlet and brewed a Double IPA using exclusively Simcoe(R) Hops! This west coast Hops was created in 2000 by Select Botanicals, Inc. and carries a fantastic flavor profile abounding with citrusy-grapefruit, piney, resiny notes that pushes this Double IPA over the top. 9.0% ABV in the brew gives it a nice malt foundation as well. Draft and bottles, 12 oz. in PA, 22 oz. out of state (as we have no 6-packs),

Pour is very nice cloudy amber with a bountiful off-white head that stays the length of the drink. It’s all spicy resinous floral hoppage up in my face when i smell, maybe an underlying sugary sweetness. Tastes like a hopgasm. Friggin’ wow dude, that’s hoppy. Very resinous tasting to me, like i just swallowed half a pine cone. Completely awesome. This beer has serious IBUs, so if you can’t handle man beer, just don’t even try. This one will make you piss hops for a week. I guess there’s a little sweet malt backbone too, if anyone even cares in a beer like this.

Second rating – Tap Capital Ale House Innsbrook 08/31/2008. Big cat piss aroma. Clear amber orange with small white fine head. Flavor is definitely hop accentuated over backbone of caramelized malts and touch of fruit. Medium body and medium/full mouthfeel. Sweet finish with tea like hop flavor and touch of alcohol warming. Off firkin wet hopped by brewery Capital Ale House Downtown 08/28/2008. Big grassy floral hop aroma with hints of herbs – parsley. Someone’s cat loose in here ? Murky orange amber with persistent rocky tan head. Big Simcoe hop flavor definitely leans to hop bitterness but enough caramelized malts to balance. Light body with medium bitter mouthfeel and very dry bitter finish with hint of alcohol.

Pours a deep amber with a decent off white head. Aroma of grass, flower, pine, grapefruit. The taste is hops hitting you up front and not relenting. There is some caramel malt to hold it up, but not for long. The hops are a bit chewy. Well done, but not my favorite hop.

Hops, hops and more hops in this one. There are hops and some citrus tones in the aroma. There are a ton of hops on first taste and they hit you going all the way back. The head is full, fluffy and white and the lacing this beer leaves is great. After the inital shock I settled in and really could take my time drinking this one. The alcohol never showed up but just a sweet backbone with a ton of hop spicing. A great double.

bottle, the aroma coming off this snifter is like sex, pure liquid hop sex. Incredible. The taste is less focused on the sex and more on the pure amazingness of this beer. It’s hoppy but also very bready malt. Great great beer. Definite buy again

12 oz bottle. Dark golden with hints of amber. A nice big off-white head. Huge aroma of grass and pine. Strong malty sweetness to start with a big punch of bitterness at the end.

The more IPAs I try, the more I am coming to appreciate the huge diversity of the style itself, how integral each hop is to flavor profile, palate, and the overall end result.
My Weyerbacher Double Simcoe IPA poured a rich dark gold with hints of brown. Almost immediately a huge head of fluffy foam and tightly packed bubbles rise to the rim of my glass. It takes a minute or two for the nicely packed head to slowly simmer down into a thick ring around my glass while leaving a thin layer floating on the top. A couple swirls, and she eagerly foams right back up again. Massive and gorgeous brussels lace adorns the sides of my glass, sticking like a finely crafted spider’s web. The nose can barely contain the huge notes of sweet sap, wet pine needles, oils, and hints of citrus such as orange and grapefruit. A huge nose to match her huge head. I haven’t even taken a sip yet and I am already bowled over by the Weyerbacher Double Simcoe IPA. Her body is one of foamy and frothy textures that practically float in my mouth. A full body, but very light in weight. Sweet sap and fresh oily pine notes dazzle. With Simcoe hops on top and in the back of the palate, an almost instant dryness appears in the finish, demanding I come back for more. I also detect notes of grapefruit and bitter orange rind. From start to finish, Weyerbacher Double Simcoe IPA leaves brussels lace marking her path to completion. A perfect blend of malts in the backbone to keep her smooth while all of her fresh oily pine, sweet sap, and citrus notes seduce the senses.
Move over Two Hearted, Double Simcoe IPA from Weyerbacher brewing has officially ousted you as my favorite IPA to date. Amazing. This is an IPA I may have to have in my fridge on a permanent basis.

bottle. Pours a deep amber with a small and quickly dissapearing slightly off white head. Malt and strong hops are pronounced on the nose with hints of flowers, citrus, and pepper. Taste is smooth with a fine balance between ingredients. Very smooth on the palate.
