Teh aroma has a piney, wintergreen (?) bouquet with a hint of sweet maltiness. The brew has a deep yellowish-orange (amber) color with an off white/cream color head. A little overcarbonated, but not too overly carbonated. The flavor has a piney, resiney, citrusy balanced with a sweet caramel like maltiness. A strong earthy floral flavor with a pretty good toffee malt sweetness. Leaves a nice sweet taste that is outlasted by bitter. Overall really solid. Amazing rich bright amber colour with an excellent off white head. Loads of beautiful suspended bubbles conjours thoughts of lying on a beach at night and looking up at the stars. Amazing sprucey piney aroma. Fresh cut grass and just an all out hop fest. Flavour. You know what is coming. Totally straight forward and one dimensional but so so f**king good. A dry as hell and soooo so bitter shrine to Simcoe and I LOVE it! Stunning mouthfeel caps a glorious performance. The first bottle was much better than the second - a lost of the huge hop aroma seemed gone. regardless a fine beer.

Nose is Simcoe in all of it’s piney, resiny, and slightly herbal glory with a nice backing of malt, caramel and honey. I do find Simcoe to be far from great for one hop beers, not enough character and flair to make it on it’s own, but it appears that Weyerbacher knew that and gave this beer a malt backing which actually makes it pretty nice. Thick, sweet mouthfeel up front that finishes nicely balanced. The flavor is more of the same, wildflower honey, caramel, some light biscut and the piney, herbal (nearly cannibis like) Simcoe flavor. This is my second time tasting it and I feel like I enjoy it more this time, just because I appreciate what they were going for. gpekar (221), Maryland, USA Jan 19, 2008 Poured a slightly cloudy amber color with a tall creamy off-white head. Nice carbonation bubbles rising in the glass. The head left nice lacing all through the drinking of the glass. There is a strong hop aroma with hints of a citrus scent. There was a strong hop bitter bite initial, but that was followed by a sweetness that cut the bitterness somewhat. The flavor rolls into a nice mild bitter finish that lasts long on the palate. A Great beer.
