De couleur ambrée cuivrée et transparente. Nez de houblon citrique, moyennement floral et résineux et légèrement herbeux, malté de caramel et légèrement fruité (abricots, léger d’agrumes sucrées) ainsi que des notes d’alcool. Ronde-moyenne en bouche avec un pétillement moyen et une texture à la fois crémeuse et résineuse. Goût très amer de houblon citrique (pamplemousse) et résineux (pin), moyennement herbeux et légèrement floral (présent durant toute la gorgée) ainsi qu’un goût fruité (abricots et agrumes) lors de l’entrée en bouche auquel se rajoute un goût malté de caramel moyennement sucré avec des petites notes de toffee parallèlement à un moyen goût d’alcool légèrement réchauffant puis en finale l’on assiste à un regain d’amertume de houblon plus citrique (asséchant), herbeux et résineux avec de faibles notes épicées (poivre). Post-goût long et moyennement sec, assez amer de houblon résineux, citrique et légèrement herbeux, moyen d’alcool et légèrement fruité (zest d’agrumes). EithCubes (2140), Indiana, USA Jul 17, 2007 Bottle. Super hoppy nose, grassy and piney with lesser citrus and grapefruit. Clear dark copper-orange pour with a pretty soapy lacing beige head. High alpha acid levels with a taste similar to the nose, only sweeter. Caramel and resin. Hop-centric and hefty (though not boozy), full-bodied and heavy with some dark, almost tarry notes. Thick and chewy malt. Strongly bitter but not off-putting. Superb rendition. Very strong aroma, pungent. Hops flavor is very powerful, a little overpowering even for a double. Good but not great. Thick hops aroma with some of the typical, more delicate, Simcoe varietal characteristics (apricot, grapefruit, some resin) which is duplicated int he flavor. But it mainly posesses brutish citrus, earth and pine notes with extra malt and alcohol. Now this isn’t all bad, but it doesn’t highlight the individuality of Simcoe as much as it could. It might as well be another reasonably well made generic double IPA. CelticBrew (676), The Crystal Coast, North Carolina, USA Jul 12, 2007 Pours a hazy copper/amber. Forms a light off white foamy head. Aroma of grapefruity hops (smells sexy). Flavor is full, yummy pines with grapefruit tones, pines, resins, with a smoky caramel ending. A very smooth double. Gosh, I wish I had some on tap! Hops are prevalent through this beer, simply wonderful!
