After the pour I was greeted with a big aroma of citrus hops and resinous fresh pine scents coupled with a bready malt nose. Thick 1" beige head sits on top of a mellow copper body. Thick bands of lacing stick to the glass as I emptied it. Creamy with a full body, huge puckering bitterness at first. The taste buds adjusted quickly to the hops creating a nice smooth drink for an IIPA. Alcohol is well hidden. The pleasant abundance of Simcoe hops really creates a great flavor profile that is backed up by some serious malts. Grapefruit and lemon along with oily pine flavors. Biscuit and light caramel malts keep the hops in check. Big and hearty IIPA that is very drinkable.

My Weyerbacher Double Simcoe IPA poured a rich dark gold with hints of brown. Almost immediately a huge head of fluffy foam and tightly packed bubbles rise to the rim of my glass. It takes a minute or two for the nicely packed head to slowly simmer down into a thick ring around my glass while leaving a thin layer floating on the top. A couple swirls, and she eagerly foams right back up again. Massive and gorgeous brussels lace adorns the sides of my glass, sticking like a finely crafted spider’s web. The nose can barely contain the huge notes of sweet sap, wet pine needles, oils, and hints of citrus such as orange and grapefruit. A huge nose to match her huge head. I haven’t even taken a sip yet and I am already bowled over by the Weyerbacher Double Simcoe IPA. Her body is one of foamy and frothy textures that practically float in my mouth. A full body, but very light in weight. Sweet sap and fresh oily pine notes dazzle. With Simcoe hops on top and in the back of the palate, an almost instant dryness appears in the finish, demanding I come back for more. I also detect notes of grapefruit and bitter orange rind. From start to finish, Weyerbacher Double Simcoe IPA leaves brussels lace marking her path to completion. A perfect blend of malts in the backbone to keep her smooth while all of her fresh oily pine, sweet sap, and citrus notes seduce the senses.
Move over Two Hearted, Double Simcoe IPA from Weyerbacher brewing has officially ousted you as my favorite IPA to date. Amazing. This is an IPA I may have to have in my fridge on a permanent basis. greenleaf (86), Florida, USA Aug 26, 2008 bottle. Pours a deep amber with a small and quickly dissapearing slightly off white head. Malt and strong hops are pronounced on the nose with hints of flowers, citrus, and pepper. Taste is smooth with a fine balance between ingredients. Very smooth on the palate. daknole (683), Plantation, Florida, USA Aug 24, 2008 Bottle, pembroke pines total wine. Yes! This one I really liked. Nice hazy amber pour wtih a pretty decent head. Aroma is juicy with citrus hops and good malt. Flavor is very hoppy but also a great malt backbone. FInish starts malty but finishes with a bitter hop bite. well done! BrotherGrendel (135), San Diego (La Jolla), California, USA Aug 23, 2008 Appearance is a thick cloudy dark orange hue with amber highlights, two fingers of off-white thick creamy head mostly sustains, good lacing on the glass.
Smell is, unsurprisingly, full of Simcoe hops, mix of sweet grapefruit, citrus, and light pine, slight biscuit malts.
Taste is initially dominated by pine and grapefruit hops, opens up to some biscuit malts and some sweet malts and honey, finishes sweet and dry.
Mouthfeel is medium-bodied, thick oily and creamy texture coats the tongue briefly, milder carbonation.
Drinkability is moderate-high for a DIPA, i really like the creamy texture matched up with the tasty sweet hop profile, a great and well-balanced east coast DIPA I would love to sample again.
