Commercial Description:
This is an incredibly intriguing ale is made by aging our Old Heathen Imperial Stout in oak barrels that were used for making fine Kentucky bourbon! The result is an extraordinary, dark, and mysterious stout whose very essence has been enhanced. The aroma is filled with vanilla, cocoa, and roasted coffee beans. This silky-smooth brew has notes of oak, whiskey, roasted barley and vanilla that meld together on the tongue to create an incredible sensation. Heresy is released in February.

650ml bomber - pours dark brown, pretty much black, with a decent tan head. Aroma is quite sweet, surprisingly even, and sort of like an oatmeal stout in a way. Lots of vanilla and whiskey up front in the nose. Kind of weird, that combination, with the typical stout roastiness in the background. Mouthfeel is a bit thin and underwhelming, especially considering this is an Imperial. I expect thickness. Flavour is perhaps even sweeter than the aroma, with more whiskey and oak, vanilla, and roasted coffee, chocolate and malt...again too much in the background for my tastes. 96 overall? Why? This is pretty overrated, unless there was something off with my bottle, but I doubt it. What was unique about this stout was also what made it underwhelming. Not something I’ll likely pick up again, especially with all the other (better) Imp stouts out there.

22 oz bomber - pours dark dark brown with some lightness near the edges of the pour, but once in the glass, it’s pretty black. Medium mocha head. Aroma of sweet chocolate, dark fruits and some vanilla. Taste is that, along with some roasted coffee, much more vanilla, and some roasty oakiness. Nothing about this that stood out for me, except the vanilla which wasn’t to my taste. I think this one’s good, but overrated, and I’ve had much better Imperial stouts. Will not get again.

22oz 2006 bottle (almost a year old). Pours thick and black with a pleasant aroma thats a bit better than the original Old Heathen - chocolate, butter, oak and other subtle scents. Tastes starts out nice with pleasant roasted dark malts and some alcohol mixing well with the woody flavors. Just a bit better than Old heathen. Its good no doubt, but lacks that big and smooth taste that comes with so many of the big impy stouts. After recently tasting GI Bourbon County Stout and a 2003 bottle of Avery’s Kaiser, I can’t in good faith rank this all that high.

Pitch black colour with a nice head. Aroma of chocolate, pleasant alcohol, sweetness and roastedness. Flavour of chocolate, bourbon, roastedness. Ends up very fullbody and very tasty endeed.

Whiskey and vanilla in the aroma, but surprisingly subtle. Deep dark black with a creamy tan head that looks like ice cream. I don’t know who poured this down the sink, it’s like a beer milkshake. Very smooth texture, I preferred this beer when it was ice cold. Vanilla flavor with a touch of the roasted malt. Clean finish with a touch of liquor. I ate it with cookies and was happy as a clam.

2005...bottle....this is a foul creation spawned from an oak barrel..the label is cool...it brings you in then you pour the beer down the sink...so the only thing this beer has going for it is the shininess of the label...I need to re-rate this 3-3-2-2-3 original rating overall was 1.3 -----2007 bottle, enjoying in 2008...pours very dark brown appears black, a brown sugar head that drifts away--silky body--smells of sweet malts & a little chocolate....defiantly oak coming through....a little bitter hoppiness throughout, especially in the finish---dark fruits, prunes/raisins and a bit of bitter oaky chocolate...glad I tried this after my palate and tastes have changed--sticky lips--a little alcohol on a deep inhale and a sweetness in the finish...rating reflects this tasting

Sampled on 11/29/2006 at the November meeting of the Junedale Beer Klub. Brought by Jed... Tasting notes: Nearly black in color, opaque. Creamy dark brown head. Bourbon in the aroma. The flavor is a wonderful combination of black/English walnuts, dark chocolate, some woodiness, and vanilla. Warm, alcohol finish with some bitterness in it. Medium to full body and very creamy. A fine example of an oaked beer. -- I have been wanting to try this beer for awhile and must say that this was one of the highlights of the tasting (although the Speedway was the best, as always!). I look forward to having this again in the future...


3/18/2008: Weyerbacher Heresy’s aroma has oaky bourbon, creamy char, and vanilla. Its flavors include semi-sweet chocolate blended with vanilla. Light, smoky char and subtle oxidation are picked up in the finish. It is opaque and black in color with a large, thick, craemy dense tan-colored head that leaves solid lacing. It is also full-bodied with a creamy, smooth, and velvety texture. This is one big, flavorful, low-priced stout that doesn’t disappoint in any way!

(Bottle) Pours dark with red and brown reflexes. Brown fast decreasing head. Aroma of bourbon, vanilla, and port. Buttery and really oaky. Very dark chocolate and notes of red wine. Dark and roasted malt. Tones of cherries, lime, raisins and hints of allmond paste. Dark chocolate flavour with a smooth mouthfeel and a buttery aftertaste. Lingering, oily oakyness. Raisins and parsley. Just the right amount of sweetness but maybe to buttery.
