Commercial Description:
This is an incredibly intriguing ale is made by aging our Old Heathen Imperial Stout in oak barrels that were used for making fine Kentucky bourbon! The result is an extraordinary, dark, and mysterious stout whose very essence has been enhanced. The aroma is filled with vanilla, cocoa, and roasted coffee beans. This silky-smooth brew has notes of oak, whiskey, roasted barley and vanilla that meld together on the tongue to create an incredible sensation. Heresy is released in February.

(03.26.06) Stout/porter sampling with Scott, Tony and Walt at DiCarlo’s, Mundelein, IL. 12 oz brown bottle from trade with Firemoose15. Undated. Poured black with small tan head. No discernable carbonation. Sour aroma in the nose. Medium bodied stout that starts with light malt sweetness and oak wood/prune flavors. Slight acidity/sourness in the mouth. Possible infection or old oxidized bottle? Finishes with light malt fade and sour aftertaste. Sour off-flavor detracts from the enjoyment of this beer. This beer deserves a re-rate if I can find a fresher bottle. Thanks Firemoose15 for the bottle. UPDATE (06.04.06) Beer tasting at DiCarlo’s, Mundelein, IL, complements of Scott L. Poured brown black with small off-white head. Medium bodied stout that started with light malt sweetness and vegetal green peas and fruity (prune) flavors. Some slight tanginess. Finished with light bitterness. Rather watery with very little black grain flavor. Again, a surprisingly disappointing stout from Weyerbacher. Scott went to the trouble of securing a fresh bottle of this stout for this re-rating - extra thanks to Scott. Rating remains unchanged.

O, a caged and imprisedoned old heathen, what do ye but ripen in your heretic ways and exhume the depths of transcendental knowledge. Ye taste just like an irish coffee, tons of whisky and scotch on some dark black unwashed limey’s beans.

2005 bottle. A punch in the face from the first wiff. Big alcohol smell and taste and something that could do damage. Good strong aroma with a good look and thin head. Could taste the malts and slight JD bourbon oak. God imperial stout. Cheers! Re-rate on a 2005 bottle. Big vanilla aroma. Thick mouthfeel and decent vanilla taste. Good but could use less time in a barrel.

On tap. Pours a dark black with tan head. Raosted malts, vanilla, some alcohol and chocolate combined to make a compelx aroma. Roasted malts up front with a trailer of chocolate and coffee. A fine brew!

22 oz bottle courtesy of kramer1708 Poured a beautiful black with a tan to brown huge fluffy head. Aromas were Doughy with some alc heat chocolate with some light roast malt. Dark fruits were burried deep in the aroma. Flavor was initially creamy to a silky mouthfeel with dark fruit and fig up front . Flavor was pretty sweet overall as it masked most of the alcohol heat in the aroma. Nice chocolate flavors that seemed doughy and bits of toffee and brown surgar. I did not see the oak in there as to be expected. A touch of whiskey though but not over done A very unexpected suprise! Thanks Kramer

Pours black with a small brown head. Huge chocolate aroma...a little smoky. Big fan of this one... Tastes of chocolate, bourbon, vanilla and smoke. The alcohol is very mellow. Bitter finish.

Black and evil with a short and short lasting mocha head. Aroma is burnt chocolate, vanilla, and oak. Flavor is surpisingly grapy and fruity...almost a littly too tangy. Others include starchy wood, salt, a bit of roasty malt, no hop presence or bitterness whatsoever, a tad bit of whiskey, and I guess a note or two of coffee. Mouthfeel is bit weak...very light but bubbly carbonation, kinda of watery...but it gains some body at room temp.

Sweet mellow smoky aroma. Oak and vanilla, alcohol, banana, huge esters and phenolics. Chocolate milk and malty sweetness. Very light bitterness. Dark black oily with thin tan head. Heavy oily body, with medium carbonation. Starts with big malt, syrupy and rich. Limited sweetness, but dark chocolate and coffee. Oak and vanilla, estery. Roasted grain, and bittersweet coffee. Finish is medium bitter with tangy oaken notes. Dry nutty bitter after.
