Commercial Description:
This is an incredibly intriguing ale is made by aging our Old Heathen Imperial Stout in oak barrels that were used for making fine Kentucky bourbon! The result is an extraordinary, dark, and mysterious stout whose very essence has been enhanced. The aroma is filled with vanilla, cocoa, and roasted coffee beans. This silky-smooth brew has notes of oak, whiskey, roasted barley and vanilla that meld together on the tongue to create an incredible sensation. Heresy is released in February.

Bottle: Nice malt aroma, a black hole, no light gets out. flavor is sweet nice blend of malt and hops, heavy, smooth finish. I am really liking most everything from Weyerbacher... This is not as oaky as some other oak stounts I’ve tried... good brew.

opq-bk, crmy-br-hd, full-body, ^co2.

aroma: ^lcrc sweet-malt candied-dk-fruit(chclt&rasberry) vanilla-pudding.

flavor: chclt-malt leafy-hop T1, chclt-malt floral-leafy-hops ^vnlla-pudding T2, ^vnlla-pudding bourbony-alchl-warmth §oak T3.

awesome aroma!
leafy-hops are hidden just below the surface but brought out by food.
complex -but not all at once... more like a quick-change artist or kaleidoscope.
like Tucher Bajuvator’s bigger brother.
i need to try this with vanilla ice cream.

pours black with small head. aroma is not that big and has a tartness about it. mouthful is a bit tart for a ba impy??? this bottle has got 4 years on it... maybe did not cellar that well. i am normally VERY impressed with all the weyerbacher ba goddies... not so much here... hmmmm.

Bottle at Borefts 10am day after hotel tasting after a very bad drunk Borefts festival ... deep deep black ... deep rich toffee nose ... sweet toffee ... big rich and heavy ... soft and smooth

12oz - Black liquid, tan head of some longevity. Nice lace. Roasted notes came forward as ale warmed. Good stout but lacks the depth of a Stone IRS for example.

12 oz bottle. Aroma of oak, roasted malt, chocolate coffee, and slight raisin. Flavor is of coffee, vanilla, and caramel. Very smooth and good. A little on the low-end (alcohol-wise) of imperial stouts.

Pours dark brown, not terribly thick. Small beige head. Light lacing. Aroma is roasted malts, some oak, raisins, coffee, chocolate. Flavor is chocolate, roasted malts, vanilla, raisins, and whiskey. A little sweet. Some alcohol. Mouthfeel is thin for the style, low carbonation. Reminds me more of a baltic porter than an imperial stout. Good, but not outstanding.

A Mes rate. Bottle at Borefts 10am day after hotel tasting.
Black with a beige head. Very sweet, full of vanilla, far too much oak, late bitterness is not enough to save it. Too much barrel, not enough stout.

12oz bottle into a snifter (2009). Straight pours deep opaque black with a 1.5-finger tan head that is thick but somewhat soapy that doesn’t stick around much and could be darker. The aroma is a bit of harsh bourbon and some oak - some alcohol, not super deep or complex, but with obvious vanilla, wood, and tannins. The flavor is big sweet malt up front with a hint of sour followed quickly by mild oak and bourbon characteristics including vanilla, wood, and tannins. This is then followed by stout flavors including mild dark chocolate and an obvious dose of coffee flavors. I really enjoy the mouthfeel and general way this beer goes down - really smooth and just feels great in the mouth for some reason - perhaps addition of oats or maybe the aging?
