22 oz. bottle I had in my cellar (lost) for years. Pours a clear pale yellow color with a medium sized white head. The aroma has a slight Belgian character, vinous notes and a big white wine spritzer component. There is a hint of some bourbon hanging around. The flavor has Belgian yeast, white wine, pineapple, honey and bourbon. I would have liked to have had this fresh, but sometimes a beer or two gets lost in the shuffle.

22oz bomber. Pours a dusky orange/amber color with a thin white head. Great boozy/bourbon aroma with slight musty/woodsy oak notes coming through. Very smooth medium palate. Not overly bourbony upfront, smooth quite drinkable beer that moves towards a more oak/bourbon/boozy taste towards the mid and end of palate. A bourbon barrel aged Belgian Triple isn’t something I would have thought to do but its very enjoyable. You do however, lose a most of the traditional belgian triple character of the unaged beer. This is a very smooth, enjoyable beer and definitely worth checking out. Overall (A)

I think this bottle was from about 2005ish... Hazy golden, small head, light sediment, nice retention...Oak and vanilla dominate the aroma with some subtle notes of belgian yeast... Flavors, Oak, vanilla, fruits, esp apple, alcohol, tobacco... creamy, medium full, slightly dry finish.. aged amazingly, very complex...

Pours a clear golden colour with an orange tint. Had a slight white head which quickly dissipated leaving only a white lining around the top of the beer. Sour aroma and flavour of tart grapes, oak, and apple vinegar.

1st August 2008. Yellowish brown beer. Dry ale, woody with a little carbonation and a slight fruity finish - banana and peach. Overall a good beer but a little dissapointing for Weyerbacher - a bit too dry.

12 oz bottle from 2005, served in a tulip glass. Pour is a hazy yellow/orange with a thin white head. Nose is bourbon, oak, malt, light citrus, candy sugar, and various spices. Taste is yeast, bourbon, citrus, and candy sugar with a wet spicy finish. I really enjoyed this brew. I like Merry Monk, but I am particularly receptive to beers done in a bourbon barrel. This is a fantastic beer!

Shimmering gold-orange, slight white head. Nose is incredibly sweet, bourbon dominating severely. There’s also some apple, yeast, and citrus. The flavor is medicinal and has even more bourbon, hot and alcoholic with minor citrus and sugar. Thin mouth, rather watery. The bourbon washes out all the soft qualities of a tripel and the end result is not impressive.
