Commercial Description:
Slam Dunkel was a small batch release in 2007. We had such an overwhelming response that we had to put it in the seasonal rotation. We also decided, as brewers, we couldn’t live without drinking this beer every year! This 7% Double Dunkelweizen is unfiltered and made with over 50% wheat malt along with pale, munich, and a touch of chocolate to give it the traditional color and flavor. Bitterness is subdued to allow the Weihenstephen yeast to shine through with those traditional notes of banana and clove. Available in June in bottles and draft. Recipe by Chris Wilson, Head Brewer.

22oz from Sam’s, Durham. Nice dark pour, resembling a robust doppelbock, with plenty of vigor in the body and some crisp carbonation. The aroma has gentle malts and a lot of tart fruit in it - very nice. Soft banana bread flavors in the taste complement the malts, and the fizzy mouthfeel keeps it quite drinkable. Pretty good.

Bottle shared at tasting. Poured a light brown with a tan head. Aroma of yeast, spice, wheat, fruit, bread malt. Taste is similar with more of the spice coming through than in the aroma. Mouth is lively. Overall, an enjoyable dunkel.

A bit like Aventinus, but lighter overall. One of the better Weyerbacher brews I’ve had.

Canals purchase. Cloudy amber pour with a sweet malty aroma. Spicey sweet taste not a bad blend.

Very malty/fruity flavor. I am trying to pinpoint the aroma, it is not very pungent, but I can smell the dark fruits and malts. Decent aroma. The it not a hop smell at all. I think I almost smell a banana-type aroma. The beer really has no head. At first, it did, but it faded away rather quickly Dark caramel brown in color. It is opaque. Kind of a toasted malt/fruit flavor. Toffee notes are in the beer. The beer is semi-creamy. The beer has some nice flavors. The toffee comes out a lot more when the beer warms up. Overall, a fairly good beer with some nice toasted and toffee flavors. A fairly fruity/malty aroma. Pretty decent brew.

Pours a dark hazy brown color with a medium frothy offwhite head. Nose is sweet, toffee, clove, lots of banana and yeast. Initial taste bangs off with banana over the mouth, caramel lingers in the background. Clove and dark fruits become more apparent into the finish. Finish is dry and resiny. Interesting brew for sure. Medium body, average palate duration and head retention.

Hazy dark umber color with a smallish, but stable bone colored head. Bananas, cocoa and wheat scents. Some bubblegum, circus peanuts and hint of smoke as well in the background. Initial flavors are quite favorable, with toasted malt and wheat, light cloves and fruit. This get very spicy in the middle to the finish with sharp spices, nearly a sharp ginger type nip. WIthout the strong finish this is a great brew. Perhaps the numbing effect of the alcohol are kicking in, but this does seem to mellow with time and warmth. Yet a weizen should not need to mellow with warmth, I digress. Some touches of butter and popcorn. I have to say I like it with some minor reservations.

My Bottom Line:
Clovey yeast and caramelized cereals join to build a sweet and spicy icing for this rich, dessert Weizenbock.

Further Personal Perceptions:
-A veil of foam tops the cloudy caramel.
-The large bubbling remains soft, increasing drinkability.
-The body is chewy and ample; a little bigger than the usual examples of the style.
-Soft tartness lightens the sugary profile.
-The overall flavor profile could be brighter for my tastes, but its intensity sure is pleasant.
