Commercial Description:
Slam Dunkel was a small batch release in 2007. We had such an overwhelming response that we had to put it in the seasonal rotation. We also decided, as brewers, we couldn't live without drinking this beer every year! This 7% Double Dunkelweizen is unfiltered and made with over 50% wheat malt along with pale, munich, and a touch of chocolate to give it the traditional color and flavor. Bitterness is subdued to allow the Weihenstephen yeast to shine through with those traditional notes of banana and clove. Available in June in bottles and draft. Recipe by Chris Wilson, Head Brewer.

12 oz bottle. Cloudy brown with a fluffy beige head. Nose is wheat and chocolate banana. Almost medium body with a prickly tang. Begins as a chocolate banana smoothie with flour, finishing with sour peach pit and grass. Lingering bitter clove.

Objectively speaking:
I like: Original aroma with an hard to decipher spiciness reminiscent of anise or cloves. Cakey, fruity, desserty and rather unique example.
I dislike: Timid wheat character provides no refreshment at all. Staying away from any roastiness, where some balance against the strong sweetness might have been reached. Unpleasant apple undertones to the nose. Although the carbonation is vigorous and large-bubbled, the mouthfeel feels a bit syrupy. Felt larger than 7%.

My Bottom Line:
Clovey yeast and caramelized cereals join to build a sweet and spicy icing for this rich, dessert Weizenbock.

Further Personal Perceptions:
-A veil of foam tops the cloudy caramel.
-The large bubbling remains soft, increasing drinkability.
-The body is chewy and ample; a little bigger than the usual examples of the style.
-Soft tartness lightens the sugary profile.
-The overall flavor profile could be brighter for my tastes, but its intensity sure is pleasant.

Found the last bottle at Rozi’s in Lakewood and had to get it. As usual with Weyerbacher this one is a solid addition to their lineup. Beautiful dark cloudy brown pour with a thick cream head on top that slims down by the time its ready to go down the hatch. Smell is banana bread and clove spices. Those same flavors show up in the mouth, but slightly subdued by the malty goodness. Palate is pretty average, but the beer still comes out ahead.

A bit like Aventinus, but lighter overall. One of the better Weyerbacher brews I’ve had.

Bottle. Pours almost opaque chestnut brown, thin off white head. Aroma is tangy and malty, some caramel and fruits scents, and is quite pleasant. Flavor is funky, earthy, malty, some yeastiness going on here too. This doesn’t taste as good as it smells, but it doesn’t sh*t the bed, if you know what I mean.
