COMMERCIAL DESCRIPTION
In 750ml corked íní caged bottles this will be and unfiltered, fully bottle conditioned version of the super popular Double Simcoe. Expect Cask taste in a bottle, with more pronounced hoppy flavor and aroma due to being unfiltered. Also, carbonation will be a bit higher as is usual in our cork n cage series in keeping with tradition. It all comes together to form a uniquely great experience for hopheads.

UPDATED: JAN 29, 2013 This is a unique brew! They are right the first sip is full of bubbles. Lots of carbonation in this one (it dies down as the beer sits, thank god!) Heavy resin & citrus in the aromatics. Taste (after the carbonation) has a slightly botanic bitterness that gets stronger but quickly tappers off into a rolling sweetness. I donít pick out any real particular tastes but the ones I do are an acetic/vinegary orange + pine herbalness... Kind of weird, lots of "resin" and citrus. Palate is thick and lively. Overall, I like and would love to try the filtered version!

750 mL bottle. Hazy orange-gold with a small white head. Nothing special to look at. The aroma improves the experience, bringing a pineapple fruitiness along with citrus (grapefruit) and caramel. The flavour is where this one shines, carrying over all of the aspects of the aroma, and filling them out. A little sweet. Full body. Light carbonation. This would be an interesting one with which to do a vertical.

This is a great IPA. A couple of friends gifted this to me, so I only have one bottle of it but I am certainly going to fix that soon. The pour is lively with a brassy tint and a decent head. The aroma is the first standout property that you notice - the aroma has all the usual spice and fruit tones, but also has a ...zing that makes you want to get to the drinking part real quick. The initial taste cinches the proposition. Hops and more hops. No beer has a better hop taste than this. The taste mellows on your tongue a bit after the initial tartness of the hops, but retains a decent roundness, but nothing worth putting off the next sip for. And thatís my single complaint with this beer - the finish. The finish is weaker than I expected for a beer that comes on so strong from the beginning. Overall, one of the best beers Iíve ever had.

A-- Poured a light cola color and settled a dark amber ruby color. Nice look to this. One finger light tan head. Helhd up extremely well. A good few minutes at half a finger and the rest of the time a thick film/ collar. One good ring of lacing on the glass. S-- Pungent, yet crisp and lively. Pungent grapefruit, orange and pine. Like walking through a Pine forest after rain. Good malt backbone to this. T-- Lots of carmel covered orange and grapefruit. Slightly slick and sweet. Good amount of bitterness to this. Has some barleywine tones to this. M-- Burnt toffee with orange medicinal qualities. Low carbonation, oily, and orange cough syrup medicinal. Hard orange/grapefruit medicinal finish with burnt toffee. O-- Good looking, good nose, and good taste to start. Then it got real medicinal. Decent enough for one, maybe two. Stick with the West Coast DIPAís
