Into my chalice, it pours a rusty brown color with no head appearing whatsoever. The lacing is filmy and clinging softly to the chalice. The smell has cherries up front with lots of malt backing that up. Some light spicy oaky notes coming through more so as the beer warms. The taste is sweet through the malts and cherries with an acceptable amount of a slight alcoholic warming, some oaky/woody taste comes through as well. The palate is medium with nothing harsh on the tongue. After some warming, it gets slightly creamy in the mouthfeel. This is not sessionable, but no worries, it just lives up to its style (that’s all). It leaves a dry aftertaste and finish. Overall, this is awesome for its style and awesome to me.

22 oz. bottle at a tasting with AirForceHops and his friend. Bottle #167 of 1404. Poured a muddy red/orange with a short lived off white head. I don’t know why White Birch can’t seem to make a "pretty" beer. Lots of sweet malt and candied fruit on the nose with a good amount of Belgian yeast. Flavor is pretty much the same. Medium bodied with a lightly sweet aftertaste. Very nice.

UPDATED: MAR 2, 2014 22 oz bottle. Number 167 of 1404. Purchased at Bert’s way back when. Nose is Belgian yeast, dried fruit, malt and candi sugar. Flavor is bold and a mirror image of the aroma. Some light barrel notes. Aftertaste is sweet without being cloying. Really solid and spot on for the style. Very nice.

Bottle at home, courtesy of the man AJAX. Pour is murky amber with a small tan colored head and good lacing. Bready, dark fruity, slightly oxidized, caramelly, somewhat dirty, earthy, and grapey aroma. Taste is heavy malty, caramelly, somewhat grapefruity, bread, cardboard, dark fruits, and toffee with a light bitter finish. The beer is OK, but it is definitely not a quad; much more barleywine-esque.

My Bottom Line:
Brown sugar, raisins and pine-y hops coalesce around this Quadrupel’s soft effervescence, leading to a dryish finish bitten by alcohol.

Further Personal Perceptions:
-A sheet of foam tops the hazy dark brown.
-Salami notes (peppery spiciness and chewy, meaty dark malts) are imagined.
-Alcohol heat and oak go hand in hand.
-This is far from the disaster the first White Birch brews were.

Cuivrée rubis au nez caramel assez intense. En bouche, belle base maltée avec un peu de sucre cuit et du carton pour gâcher la finale. Dommage, mais c’était bon quand même.

From the 550 ml. bottle number 185 of 1,404. Bottled July 2012. It pours mahogany brown with reddish hues leading up to an off-white head that does not linger very long. Sweet malts, yeast, and dark fruit like fig on the nose with a low hop character. The body is thinner than I might have expected but has a sort of wine-texture thickness to it. Sweet taste at the start followed by a low and not terribly bitter finale. Alcohol well-integrated into it.

2013.02.14 - White Birch 3 Anniversary Ale - 22oz bottle in goblet glass. Bottled July 2012. Bottle # 1086 of 1404. Pours a mostly clear medium deep mahogany red-brown. Medium carbonation produces a good off white head. Settles to center cap and ring. Aroma is hard to pin, not hoppy. A bit of a mild fruit perhaps, and some alcohol notes. Mouthfeel is medium. It's not too heavy but it is a bit creamy. Carbonation seems a good level. Taste follows nose, to me. Fairly well balanced, not overly sweet and not overly bitter. Quite boozy. I've never had a White Birch brew before so not sure how this anniversary brew compares to their normal fare. Pretty much what it says on the bottle, an interesting Quad made pretty boozy in oak barrels. Aroma 6/10, Appearance 4/5, Taste 6/10, Palate 3/5, Overall 14/20

Hazy brown with medium light tan head. Aroma pleasant brown sugary malt, touch of citrus, red fruit. Medium full body. Expected amount of alcohol, bit of carbonation. Flavor is largely sweet but in a nice caramel way, dark red fruits, wood, a little roasted malt, finish slightly chalky. Very enjoyable.

22oz bottle-tan-dark red. A-cherry cough syrup, acetone/medicinal. T-roasty med malt, burning acetone/medicinal. 44214=1.5 After sitting for 15 minutes, the burning fades some on the taste, still in full force on the nose after swirling. 44428=2.2 Split the difference =1.6
