At White Birch Brewing our goal is to create great beer for the enthusiast. Each batch is brewed and bottled by hand at our brewery in Hooksett, NH. Barrel aging is a process we love at White Birch. Each barrel we use is carefully selected, filled, and aged until it is ready. There is no hurrying a barrel. For this we think the effort is well worth the wait. Crafted in small quanitities to be savored for any occasion. We hope you enjpy this unique beer.

Bottle 17 out of 192. Pours a cloudy orange copper with a small off white head leaving spotty lacing. The aroma is a strong funk and fruit. Meidum mouthfeel with a light fruity malt and some sourness and tart. A decent sour ale from White Birch.

"a little apprehensive going on based on consistency issues being relayed to us 2nd hand by the guy who brought this brew. but there have been hits as well as misses, and this one was pretty good. nothing mind blowing, but it had a nice fruity (cherry) cider vinegar aroma, tart and slightly sour, but fairly mellow flavor. A good intro to the style, perhaps."

first wild of the day .. . medium amber .. light foam .. . light tartness, some barrel, and wet wood .. . light mouth .. quite a clean finish, short .. . . nice stuff, age has been good .. . . I wouldnt call myself crazy, Just mentally hilarious.

Tasting at Papsø’s, corked bottle
Cloudy red-amber color. Nice aroma, caramel, woody, and just a bit sour. Good body strength, lean malt flavor, moderate acidity, quite good wood presence, light vanilla. Rough but pleasant.

Bottled 6/9/2010 Pours a deep reddish brown with a moderate sized tan head that slowly recedes to a cap on top. Smells of tart funk from the moment I get the cork out. Lemons and sour cherries atop some faint sweet caramel and lots of barnyard funkiness. Oaky vanilla and a bit of barrel char in there as well. Its a bit odd how the flavor on this one develops. I get a sweet caramel and sugary maltiness up front. We then develop a bit of fruity lemony tartness mixed with some barrel notes, and then the finish goes quite dry with a mild lingering funkiness. I fully expected a bigger body as I took that first sip but yeah it turns quite dry. Medium to thin body with a spirited level of carbonation and a tart bubbly mouthfeel. Decent beer, definitely different, too bad its my last bottle.

[ Bottle # 57/192 ]. Unclear medium to dark red - orange amber colour with a average to large, frothy, good lacing, mostly lasting, beige head. Aroma is moderate to heavy malty, caramel, barnyard, cask wood, berries, alcohol. Flavour is moderate to heavy sweet, light acidic and moderate bitter with a long duration, wood, berries, wine. Body is medium, texture is oily, carbonation is soft, finish feel is light alcoholic. [20110918]

(Sample at Papsø’s) Pours a slightly hazy copper amber with medium, toffee head. Aroma is a tart with notes of alcohol and oak. Full-bodied, medium carbonation, oily texture and an astringent finish. Taste is sour and not that complex considering the alcohol strength.

Bottle at Papsø. Hazy red-brown coloured with a medium sized off-white head. Sweet aroma of caramel, dried fruits, oak and berries. Fruity flavour of caramel, dried fruits, oak and berries. Fruity finish.
