This traditional saison is brewed using North Carolina grown barley, wheat and rye from Riverbend Malthouse and is open fermented. The beer is then finished with Brettanomyces and bottled. Drink it fresh, or let it age and bring out the funk.

Citurs and some hay. Bretta. Golden pour with good head and lacing. Tangy finish. Nice balance. Some peel here. Bottle shared at tasting a while back.

Very pale colored body looked a lot like a Pilsner, but the carbonation was stronger, and the head formation larger, at a thickness of two fingers. The aroma was lemony, doughy, and floral, with some funk from the Brett if I inhaled deeply. The taste was crisp, like a cracker, and also displayed a tartness. The funk was only hinted at, due to a rather fresh age of 3 ½ months from bottling. There were strong wheat beer influences in the finish in the form of banana, clove, and bubblegum flavors. I think the flavor profile was interesting, but a bit too delicate at this time. This beer could benefit from aging to allow the Brett to develop more. Very airy and light on the palette, evoking a feeling of a breezy summer evening.

From a bottle at the RB DC tasting September 6. It is a clear light gold color with a slight head. The aroma is of flowers and the taste is a sharp bitter flavor that fhas a bitter finish that lingers on the palate

Sample at the brewpub. Hazy golden color with a medium fluffy white head that recedes gradually. Small patches of lacing on the glass. Aroma of funky fruit, malt and grassy hops. Medium body with flavors of brett, floral hops, malt and tropical fruit. The finish is mildly funky with a fruity aftertaste. Above average overall.

Bottle courtesy of Max shared with Mike. Pours a bright hazy orange with thin white lacing. Mouthfeel is bright and peppery with notes of spice, clove, light banana, super fresh yeast on the nost and light bitterness towards the end. Clean malt/wheat.

500ml bottle shared poured a cloudy carbonated yellow with long lasting white head. nice mild funky nose and not over strong on the brett. I was expecting more but this one is delicate. the flavor was more of the same. nice mild funkiness not what I would call a wet horse blanket but maybe a pony blanket. overall tasty light somewhat tart and funk.
