This traditional saison is brewed using North Carolina grown barley, wheat and rye from Riverbend Malthouse and is open fermented. The beer is then finished with Brettanomyces and bottled. Drink it fresh, or let it age and bring out the funk.

Sample at the brewpub. Hazy golden color with a medium fluffy white head that recedes gradually. Small patches of lacing on the glass. Aroma of funky fruit, malt and grassy hops. Medium body with flavors of brett, floral hops, malt and tropical fruit. The finish is mildly funky with a fruity aftertaste. Above average overall.

500ml bottle shared poured a cloudy carbonated yellow with long lasting white head. nice mild funky nose and not over strong on the brett. I was expecting more but this one is delicate. the flavor was more of the same. nice mild funkiness not what I would call a wet horse blanket but maybe a pony blanket. overall tasty light somewhat tart and funk.

The beer is a fairly pale straw-ish yellow color. Itís quite cloudy with a very puffy white head. Tons of bubbles. The bottle gushed a fair bit upon opening. The aroma is sweet, dusty grain with a pleasant farmhouse yeastiness. Fruity, floral brett flavors. Light apricot, peach, honey with a deeper earthiness underneath it. Quite dry. Just a little bit of underlying simple malt sugariness. Lots of earthy yeast flavor. Moderate bitterness. Nice, light feel. Effervescent. Easy to drink.

UPDATED: JUN 22, 2015 Taster at Funatorium. Canít believe I havenít tried this until now. Sometimes simple is best. Pretty light yellow pour. Funk, barnyard and super crisp. Saison notes are super subtle are on point as they always are with WW. Citrus plays nicely. Some tropical/grassy notes in background. Balanced perfectly between saison/ brett notes. So, so well done. Loved it. Slightly subdued, but a great summer beer.

Bottle. Pours a clear yellow with a frothy white head. Cut grass, fruit, and old lemon. Medium mouthfeel. Slightly sweet and funk notes. Ends fairly clean with only a lingering brett note. Easy drinking for a 6.5% beer.
