COMMERCIAL DESCRIPTION
This traditional saison is brewed using North Carolina grown barley, wheat and rye from Riverbend Malthouse and is open fermented. The beer is then finished with Brettanomyces and bottled. Drink it fresh, or let it age and bring out the funk.

’14 bottle in Spring ’16. Cloudy straw yellow, loads of carbonation on a slow fading pillowy head. Nose is lots of tropical fruit brett aromas, some sweat. Taste is biscuity malts, wheat, light peppery spice, some sweaty brett funk. Good stuff.

Nice funky saison - bordering on sour. Complex grain bill with bright citrus and yeasty funk.

Bottle at the Bottle Share. One of the first saisons of the day. And definitely the best one. Lots of spice and floral flavors. Classic yet yummy.

Bottle shared by my friend doug. The beer is a clear gold with a big head of white foam. The aroma has fruity brett musty notes. Sort of funky. Nice funk character throughout. Medium body and moderate carbonation. Pretty good.

Bottle. Huge gusher, so got maybe ½ to ¾ of the bottle, which is not great when these things aren’t exactly cheap. Pours, or explodes, a hazed gold with a thick white head. Small yeasty grey floaties in the bottom. Sweet wood, musk, funk. Medium-bodied, soft sweetness, a bit of wheat, musk, a nice floral note. Dries out a touch, moves to hay and floral notes, long slow wood and brett. Very easy drinking. Wish I had more of it.

50cl bottle pours a dark gold with some cloudy, white head. Nose has dusty couch, straw, grass, dried citrus peel. Flavor has light white flour, citrus peel, light band aid, flower pollen. Dry finish.

Draft. Hazy light golden body with a frothy white head. Brett and more brett in the nose — farmyard and horse blanket along with toasted grain, cracker, light citrus. The flavor is moderately sweet and lightly bitter. It finishes lightly to moderately sweet and lightly to moderately bitter. Medium body, watery/creamy texture, lively carbonation. Lightly sweet aftertaste. Less than bone dry, but enjoyable. Taste of lacquer, funk, mustiness and fruit. The problem for me with many brett saisons like this is that the brett is so dominant you have to dig deep to get any delicacies, one of the pleasures of good saisons.
