This ale is 5.6% abv and our first venture into barrel aged American wild ales. A blond Saison base similar to that of Saison I, fermented on our proprietary Wicked Wild strain. After fermentation we moved the beer into Petite Verdot Barrels from Rock House Vineyards and added mango, papaya and guava where it sat for 6 months. This ale is tart and tropical with notes of musty hay and citrus. The tartness of this sour is moderate and the dry fruityness makes this beer a great palate cleanser and pairs well with delicate dishes.

Updated: Aged in white wine barrels with 250 lbs per batch of papaya, mango, pineapple and guava. The beer is blended from barrels ranging 5-12 months.

This was my favorite from WW. Pours a hazy bright golden with a big white head. Nose of saison yeast and light tropical fruits, though I wouldn’t have suspected real fruit in the brew. Hay and wood and light funk. Taste adds a dry acetic quality and more wood, almost a bit closer to Chardonnay but much drier. Crisp and refreshing. I could drink this all day.

My first sour from Wicked Weed and it was delicious! I love their line of sours and this was the leader of them for me. The fruit taste is evident along with the white wine! Just a wonderfully made sour!

Offering shared at RateBeer Grand Tasting 2014 (St. Louis, MO). Pours a pale golden hue, gentle glow with mellow haziness. Loose bubbly white head dies to a mellow ring, sticks around as a subtle ring and laces small. Aromas are a bit oaky, white wine, gentle tropical fruit throws mango and papaya. Touches of oak, some bread, white grape and gentle tannic oak. Initial is pretty approachable, lighter body with mellow carbonation shows some decent sourness +tuhces of white wine, grape and melon. Subtle honeysuckle. Some cobwebs and mango, gentle pineapple, oak. Backend is dry, a bit tannic and sour. Nice pineapple sourness with mellow papaya, faint guava, some earthiness, and nice trailing fruit. Some nice complexity, gentle and pretty crushable. Touches of earth, tropical fruit and pineapple trail out. Some nice stuff. Gentle, a bit a undercarbed but quite crushable. Nose a bit soft.
