This ale is 5.6% abv and our first venture into barrel aged American wild ales. A blond Saison base similar to that of Saison I, fermented on our proprietary Wicked Wild strain. After fermentation we moved the beer into Petite Verdot Barrels from Rock House Vineyards and added mango, papaya and guava where it sat for 6 months. This ale is tart and tropical with notes of musty hay and citrus. The tartness of this sour is moderate and the dry fruityness makes this beer a great palate cleanser and pairs well with delicate dishes.

Updated: Aged in white wine barrels with 250 lbs per batch of papaya, mango, pineapple and guava. The beer is blended from barrels ranging 5-12 months.

This was my favorite from WW. Pours a hazy bright golden with a big white head. Nose of saison yeast and light tropical fruits, though I wouldnít have suspected real fruit in the brew. Hay and wood and light funk. Taste adds a dry acetic quality and more wood, almost a bit closer to Chardonnay but much drier. Crisp and refreshing. I could drink this all day.

Bottle shared at Natifest í14. Poured a hazy yellow color with an average frothy white head that mostly lasted with good lacing. Moderate to heavy sour yeast and sweet fruit aroma. Medium to full body with a smooth texture and soft carbonation. Medium to heavy sour & sweet fruit flavor with a medium to heavy sweet & sour finish of moderate to long duration. This is a solid beer.

Bottle at home. Pour is clear yellow with a small white head that quickly dissipated. Sweet tarts, lemons, sour grainy, biscuit, green apples, lacto and papaya in the aroma. Taste is sour grain, lemon peels, green apples, pears, straw, and light oak with a huge sour finish. Light body with high carbonation. Nothing off putting but kind of a letdown.

Hazy straw color with a white head that quickly dissipates. Aroma of lacto along with some flowery hints. Smooth, well balanced taste though not as tart as I expected. No wine or oak in the flavor but a very tasty beer. Good first attempt at barrel aged wild beer. I hope to try more ---Rated via Beer Buddy for iPhone

Bottle pour shared by b3shine. Thanks! Pours a pale yellow with no head. The aroma is pancakes and smoke. The taste has sour apples and lemons. Light body and low carbonation.

@ Natifest / Cincinnati OH --- Cloudy gold, thin rim head, no lace. Taste is malt that moves to sour very quickly, then to a sprinkling of bitter in the finish. A decent sour ale with a good lingering finish.

8/02/2014: Donít get me wrong, I have nothing against sour beers, but I must not have the right palatte for it yet or something because while this one is good, it isnít all that and reminds me of 80% of the other sours Iíve had. Itís acidic and tart, but I donít really get any of the tropical fruit or wine barrel aging coming through. Itís more like lighly carbonated white wine vinegar thatís well-balanced and drinkable.

Bottle in trade with Joe. Thanks buddy. Pours perfectly clear and perfectly golden colored with a tiny ring of white bubbles that dissipate immediately. Sour vinegar aroma, super acidic, with pineapple, apricots, white grape, peaches, pears, and definite vinous wine notes. Smells juicy. Flavor starts with some light apricot sweetness, papaya, then explodes with huge sourness, some vinegar, finishes with acidity on the tongue. Light bodied with plenty of carbonation. Everything is there it seems but the flavors of the fruits and sharpness of the sour bite fade off right before they tingle the taste buds. Not bad, but was hoping for a bit more flavor here.
