This ale is our first venture into barrel aged American wild ales. A blond Saison base similar to that of Saison I, fermented on our proprietary Wicked Wild strain. After fermentation we moved the beer into Petite Verdot Barrels from Rock House Vineyards and added mango, papaya and guava where it sat for 6 months. This ale is tart and tropical with notes of musty hay and citrus. The tartness of this sour is moderate and the dry fruityness makes this beer a great palate cleanser and pairs well with delicate dishes.

Updated: Aged in white wine barrels with 250 lbs per batch of papaya, mango, pineapple and guava. The beer is blended from barrels ranging 5-12 months.

This was my favorite from WW. Pours a hazy bright golden with a big white head. Nose of saison yeast and light tropical fruits, though I wouldn’t have suspected real fruit in the brew. Hay and wood and light funk. Taste adds a dry acetic quality and more wood, almost a bit closer to Chardonnay but much drier. Crisp and refreshing. I could drink this all day.

750 ml bottle courtesy of Theydon_Bois. Pours hazy pale golden with a small frothy white head that leaves a small trace on the glass while dissipating. Smell is fruity with crackers, lemon juice, lime juice, pineapple, peaches, star fruit, yoghurt, hay, dry soil, minerals and lemon zest. Taste is sour and fruity. Mouthfeel is dry, tart, mouthpuckering and light bodied. Finish is sour with crackers, lemon juice, lime juice, pineapple, peaches, yoghurt, hay, dry soil, minerals and lemon zest. Tasty simple citric-centered sour. Wouldn’t mind more depth though...

Pours a hazy golden color with good carbonated and a quickly dissipating foam head. The aroma reminds me of a good buttery white wine. I also noticed mango, lemon citrus, yeast, some oak, and there is barnyard scents too. While tasting I picked up on medium tart intensity, salty sour flavor, lemon, yeast, and it had some acidity in the finish. This was a good beverage, very kind to the palate. Overall I was not too crazy on the finishing taste, still I?d try this again.

6 month old 500 ml bottle. Pours clear yellow with minimal head. Nose is mild, white wine, sour, berries. Taste is sour and dry, faint hint of mango on the back end. Tasty, but I expected the fruit to have more presence. I was happy to try this but $16 for "a great palate cleanser" is a bit much. I would not buy this again.

500 ml bottle shared by drsordr. Pours a slightly hazy golden color with a thin off white film. The aroma and flavor have tart, lightly sour citrus, some tropical fruit, white wine, soft oak, light funk, overall I liked this, but think it would have been great with some carbonation.

Bottle pour light lemon yellow with rapidly dissipating small white head. Nose lightly tart, white wine, lemon, and hint of funk. Taste crisp up front, apple, some citrus. Mid palate a hint of tannin from barrel. Sweeter finish. Syrupy mouth feel. Nice mix of flavors but fairly flat carbonation.

Clear yellow color. Grape and funky hay aroma. Flavor had a touch of white wine and grape again. Green apple and pear. Light funkiness. Finish is a little sour with lots of fruit and wine.

Bottle (at Raleigh Times). Head is mostly diminishing. Body is hazy light to medium yellow. Aroma is lightly malty (toasted grain), lightly yeasty (barnyard), with notes of sour apple, kumquat, lemon, guava. Flavor is moderately sweet, moderately to heavily acidic. Finish is lightly sweet, moderately to heavily acidic, lightly bitter. Medium body, watery texture, lively/fizzy carbonation, lightly to moderately astringent. A fun sour even if it fails to truly excite. The fruit additions don’t push it into "fruit beer" territory thankfully, and honestly it wasn’t terribly obvious that fruit had been added...even straight lambic has apple-citrus notes naturally. Maybe only the guava-ish character showed through for me, but YMMV. Pretty decent.

Bottle split at the sleepy-rapping tasting at Ronny & Alex’s pad, CBC fine tuner, 30/04/15 picked up at the funkatorium. Lightly hazed golden with moderate off white spotting. Nose is tangy citric peel, light spice, tangerine, pissy notes, light acidic tones. Taste comprises soured citric peel, light brett, funk, pissy, peach, apricot, pineapple. Medium bodied, fine carbonation, semi drying close peppered with tarte tropicana. Decent sour.
