COMMERCIAL DESCRIPTION
This ale is 5.6% abv and our first venture into barrel aged American wild ales. A blond Saison base similar to that of Saison I, fermented on our proprietary Wicked Wild strain. After fermentation we moved the beer into Petite Verdot Barrels from Rock House Vineyards and added mango, papaya and guava where it sat for 6 months. This ale is tart and tropical with notes of musty hay and citrus. The tartness of this sour is moderate and the dry fruityness makes this beer a great palate cleanser and pairs well with delicate dishes.

This was my favorite from WW. Pours a hazy bright golden with a big white head. Nose of saison yeast and light tropical fruits, though I wouldn’t have suspected real fruit in the brew. Hay and wood and light funk. Taste adds a dry acetic quality and more wood, almost a bit closer to Chardonnay but much drier. Crisp and refreshing. I could drink this all day.

This draft brew from the brewery poured a small sized head of foamy finely sized white colored bubbles that were mostly lasting and left behind a typically carbonated transparent yellow white colored body. The complex aroma was tart and sour. The mouth feel was tingly at the start and at the finish with a lingering dry aftertaste. The yummy flavor contained notes of mildly acidic mildly bitter tart sour mild hops citrus dry and breads. Delicious and one I would certainly like to have again.

On tap at the brewpub. Pours a hazy gold with a white head that dissipates to the edges. Aroma has a great combination of tart lemons and earthy grain with a nice dry funk backing. Flavor has dry tart lemon up front with some earthy grains and fink in the finish.

Clear golden yellow, no head. Smell citrusy, almost tropical. Some dry, dusty notes, too. Stoney, even. Perhaps. Very refreshing and quaffable. Lots citrus notes melding with funk and barnyard. Very tasty!
