Serenity is our aptly named 100% Brettanomyces fermented beer. We are one of only a handful of breweries in the US doing 100% Bretta fermentation. That said for our first one we wanted to do it in the farmhouse style that bretta entered the Belgian brewing world. Serenity is light in color with a subtle golden haze, the nose bursts of white grape, mango, pineapple and old leather. The flavors are similar to those found in New Zealand white wines and notes of guava and grape skin stand out leading to a well-rounded finish.

Formerly known as Transcendence.

Clear yellow pour with a white head. The aroma has some brett as well as some wheat and peach. The flavor is similar. I get some pineapple and peach notes as well as some grass, biscuit malt, yeast and light brett. Medium mouthfeel and medium carbonation.

Draught at the Funkatorium, Asheville, NC.
White Wine barrel aged. Clear yellow colour with a small white head. Brett, candy sweetness, hops and bubblegum in the aroma. White wine, sweetness, dryness, candies and mild hoppy bitterness in the flavour.

500 ml bottle, thanks Jim. Pours a hazy light blond color with lasting white foamy head. Aroma is Brett, fresh apples, and bright acidity. Flavor is same with bright carbonation, hay, horse saddle, white wine tannins, and oak. Thin to medium body, dry Brett finish.

UPDATED: OCT 8, 2014 Light cloudy yellow pour with a fluffy white head. Pineappley Brett aroma. Soft light taste, so smooth and balanced. Some tang, lightly dry, extremely refreshing. Slight sweetness from the wine. Really good. Can really drink this all day.

Bottle to glass. Pours a clear pale yellow color with a fizzy white head. Aroma is dry, mildly tart, white wine, sulfur. Flavor is tangy, tart, light citrus. Tingly feeling lasts on the tongue into the finish. Solid farmhouse, but not quite a sour.

Had this at the 2014 RB Pittsburgh Summer Gathering at Horny Devel’s place. Actually it was after the equinox at the beginning of fall, but DILLIGAF. Big thanks to James & Michelle for hosting such a nice spread of quality beers and for this particular beer a GIANT thanks goes out to artmcd8. Mild beery smell. Looks like lemonade with a head. Feel is soft and almost watery in texture. Mild co2. This beer’s mild nature makes it fun to be with. Never in yer face, just a nice even beer. You’d never know this is 5%, hides the alky well. Laid back without anything getting in the way. Mild tartness without any burn. Finish is easy and mild. This beer is easy to like and it ROCKS. Yummy.

Picked up a bottle of this over Labor Day weekend when I was in North Carolina. Poured a slightly pale yellow color, slight haze with a quickly dissipating white head, which leaves just a wispy white head. Aroma is barrel notes, brett, funky notes. Tartness, with some nice woody character and a decent amount of apricot and light peach. Incredibly drinkable thanks to a lower ABV. Perhaps less complex than other similar beers, but incredibly tasty.

Bottle shared with Brian and Edgar. Small snifters. Pours a straw colored with a frothy white head. Some lacing. Aroma is pineapple, passionfruit, banana, and white wine grapes. The taste is white wine, mango, pineapple, slight funkiness, and cereal. Very high carb so it is rather champagne like. Refreshing. Finish is fruity and bubbly.
