Serenity is our aptly named 100% Brettanomyces fermented beer. We are one of only a handful of breweries in the US doing 100% Bretta fermentation. That said for our first one we wanted to do it in the farmhouse style that bretta entered the Belgian brewing world. Serenity is light in color with a subtle golden haze, the nose bursts of white grape, mango, pineapple and old leather. The flavors are similar to those found in New Zealand white wines and notes of guava and grape skin stand out leading to a well-rounded finish.

Pours a bright lemon rind yellow with a touch of haze and two fingers of frothy white head. Wonderful aroma, a pervasive earthy barnyard funk floats out of the glass carrying notes of strawberry candy, citric acidity, and subtle sweetness. A subtle but bright tartness in the flavor with earthy notes and a touch of funk. Light bodied and dry with a touch of bitterness.

Bottle: The aroma consists of moderate florals, light lemon, sour grape, and light white wine. It pours a dull white-gold with a small white head. There is some minimal white dotted lacing on the sides of the glass. The flavor starts with a quick dose of citrus and tropical fruits. The finish as light-moderate sour lemon, light florals, sweet tarts, and faint oak. It’s light bodied with moderate carbonation.

It pours a clear golden straw yellow with a bubbly white head. The aroma has a strong musty horse blanket yeast odor, a mild vinous scent and a touch of cask. One of the better ones I’ve had from these guys. Grassy and lemony with a little bit of tartness on the palate. Finish is dry and medium in length. Nice complement of flavors.

2/17/15. Thanks, Carl! Hazy yellow pour with a nice off-white head, good lacing. Funky Brett aroma, chalky sourness, tropical fruits, red berries. Nice flavor, light tartness, Brett funk, creamy, fruity. Tasty!

Bottle at home with my wife. Pour is clear golden with a small white head and decent lacing. Grassy, pineappley, light weed, some melon, earthy, and fruit peel in the aroma. Taste is bretty, pineapple, light butter, some lemons, dank, and cantaloupe with a medium sour finish. Thin mouthfeel with high carbonation. This is definitely the best sour I have had from Wicked Weed, but there are still some light butter notes that kind of ruin it for me.
