COMMERCIAL DESCRIPTION
Serenity is our aptly named 100% Brettanomyces fermented beer. We are one of only a handful of breweries in the US doing 100% Bretta fermentation. That said for our first one we wanted to do it in the farmhouse style that bretta entered the Belgian brewing world. Serenity is light in color with a subtle golden haze, the nose bursts of white grape, mango, pineapple and old leather. The flavors are similar to those found in New Zealand white wines and notes of guava and grape skin stand out leading to a well-rounded finish.

Bottle: Murky, bright straw colored body with a huge, foamy white head that looks & rests on top like a cumulonimbus. Lovely aroma; honestly could have mistaken this for a Drie Fonteinen gueuze. Loads of funky Brett, old pineapple tartness, moldy wet hay, damp barnyard cotton, lemon flesh, mild acidity, faint vinous grape, woodsy musk... Yeah, I’m throwing a lot out there, but you get it. Unfortunately the taste doesn’t live up to those aromatic standards. Some wood & barnyard floor type Brett funk, but the complexity doesn’t match the aroma & nor does the tartness. Not really sour at all... Grassy, mild with some estery notes, leading to a dry, yeasty, abrupt finish. Some lemon peel & melon notes open up with warmth with a small, mid-palate acidic bite, but still not quite leveling up to the amazing nose. Still, a very solid beer, quite crushable, just expected a little bit more on the palate (especially after smelling it).

Bottle thanks to alexsdad06 ! Pours a beautiful golden color with good clarity and a finger or so of white fizzy foam. The nose has some nice tart lemon, hints of tropical fruit, unripe pineapple, dusty peach... the palate falls a bit short compared to the nose, its crushable but the barrel character is light if not non existent. The balance of funk, fruit and sourness are nicely integrated it just lacks the flavor punch and complexity that the nose hinted at. Good beer but I think I was expecting a little more from this one !

Big thanks to tectactoe on this. Really pumped to try it. Pours a light crisp yellow color with a light white foamy head. Nice aroma with a tart fresh grassy note. Compared to the smell the taste was a bit of a disappointment. Seemed very dull right off the bat. Not bad just not matching the nose. As it warms some lemon freshness comes out that can hit the spot on a hot day. It’s good just not really what I was expecting. Maybe my hopes were too high unfortunately.

Hazy gold pour with a nice white head. Lemony sourness, yogurt, funk, tropical fruit, some barnyard funk, and a very welcomed grape note...almost a funky muscadine grape. Really tasty.

Bottle shared at Dunt’s Tasting (Chicago, IL). Pours a nice well hazed touch darker golden hue. Lively carbonation, frothy bright white head dies down. Laces ok. Aromas are big tartness, rich lactic and citric acidity, lemony sourness, lime, touch of cookie and yogurt. Initial is dry, a bit more mellow body with touches of tartness, jabs of citrus, mellow earth aand bread. Middle is a touch bready, yogurty. Decent citrus and vanilla. Some touches of spice, yeast. Backend is a touch dry, slick and tart. Some gentle spiciness, yogurt and vanilla. Finish is dry, crisp, moving on cleanly. Lacks a firm assertive character but displays a good integration fairly easy going on the palate. Still, hard to stand out among a lot of the other Wild beers out there.
