COMMERCIAL DESCRIPTION
Serenity is our aptly named 100% Brettanomyces fermented beer. We are one of only a handful of breweries in the US doing 100% Bretta fermentation. That said for our first one we wanted to do it in the farmhouse style that bretta entered the Belgian brewing world. Serenity is light in color with a subtle golden haze, the nose bursts of white grape, mango, pineapple and old leather. The flavors are similar to those found in New Zealand white wines and notes of guava and grape skin stand out leading to a well-rounded finish.

Bottle, thanks for sharing! Pours a hazy light earthy yellow with a white head that dissipates to the edges. Aroma has a decent aount of funk and earrthy tart fruits with a hint tropical fruits. Flavor starts with heavy barnyard with dry, earthy tart fruits and a hint of light grains.

Bottle shared at tasting. Pours light clear golden. Smells kind of like a pilsner, light funk. Taste same with not a good finish. Not crazy about this one.

My Bottom Line:
Citrus fruit and brettanomyces jive, leading to Riesling-like qualities and elderberry juice.

Further Personal Perceptions:
-A slice of foam tops the pale golden shine.
-There seems to be a light tartness here as well (lacto?).
-The finish is also mineral.
-This is classy, complex, super drinkable and balanced. Great job all around.

500ml bottle from The Beer Store Wilson. Crystal clear golden hue with bright white mostly diminishing fizzy head. Virtually no lacing. Light tart fruit, grape, lime and dank basement aromas. Crisp heavily carbonated light tart grape up front with the same finish. Reminded me of a white wine. Crisp carbonation on the palate. To be fair this was not a good beer to me, but I have liked all the other Wicked Weed brews. I had a hard time figuring out what was going on with this one, there were other smells and tastes that I couldn’t put my finger on. This led to my frustration rating this beer.

A hazed blonde ale with a thin white head. In aroma, smooth fruity malt with light Brett, chalky character, pleasant and funky. In mouth, a nice sweet fruity malt with light sourness, well balanced, light Brett, very nice and smooth. Bottle at brewery.

translucent straw, thin ring light lacing. Stinky brett-pineapple nose, thin striking and sour. Pineapple front palate is thin, tons of saddle through mid, super cloying gum brett finish. Watery palate throughout, marked acid all over, thin body can’t support any of this.

Pour is pale straw yellow, slightly hazed, with a good bit of tight white head and a fair bit of lace. Nose is stale sweat, lemon, husky stinky brett, pineapple rind, notes of pepper, and some fresh leather. Taste is strong brett pineapple, a hint of sweaty leather, musky rind, strong carb, light body, prickly on the throat.

500ml bottle from Hops and Grapes in Hickory. Clear yellow pour with a thin off-white head. Aroma is nice funky hay and bread. Tastes are light bretty lemon, wheat, little floral, grain, barnyard, light spice, grape. Lots going on - all light and crisp. Palate is just a tad on the watery side. I typically like a little more sour in my sours, but this is very nice - though expensive ($11.99 I think).
