Serenity is our aptly named 100% Brettanomyces fermented beer. We are one of only a handful of breweries in the US doing 100% Bretta fermentation. That said for our first one we wanted to do it in the farmhouse style that bretta entered the Belgian brewing world. Serenity is light in color with a subtle golden haze, the nose bursts of white grape, mango, pineapple and old leather. The flavors are similar to those found in New Zealand white wines and notes of guava and grape skin stand out leading to a well-rounded finish.

Pours a pale hazy yellow with a nose of lemon zest, sour funk and Brett. Nice sour.

Pours hazy yellow with low to medium white head. Aroma of green grapes, green apples, grass, bretta, gooseberries. Taste is mild tart with an almost oak aged chardonnay buttery mouthfeel, light funk in the finish. Light and smooth body with soft carbonation. Very drinkable and refreshing but I had expected a slightly more sour and tarty taste.

Bottled. Pours deep golden with a small off-white head. Aroma of tropical fruit, funk, citrus and woody notes. Slightly sweet flavor that ends up dry and tart. Light to medium bodied, oily texture and soft carbonation. An excellent Sour. 🌟🌟🌟🌟

Backlog, from the Funkatorium. Poured hazy golden. Aroma was brett driven funk, some fruitiness, a touch of cheddar, and crackers. Flavor matched. Only slightly tart, which isnít surprising really. And yeah, you could compare it to a NZ SB and not be far off.

If you get this in a bottle, be sure to have a thirsty towel handy, as my sample fizzed quite a bit. When it settles down, it pours translucent apricot with a rather thick eggshell head. Aroma presents delectable sour grape, pineapple, mango and fresh malt tones. Fruit is the main player in the flavor, again with pineapple (I love pineapple!), mango and grape, fairly sour with a malty undertone and a dry wine finish. Mouthfeel features decent body and OK fizz. A serene wild ale - if that is not an oxymoron.

Bottle courtesy of Travlr. Poured a hazy light straw colour with a thin broken white head. The aroma is light acid pear citrus. The flavour is moderate to light acid, dry mineral, grainy, vinous palate. Light bodied with average carbonation. All the pleasure is up front. A little light in the palate.

Bottle at home thanks to my summer secret Santa. Thanks! Pours a clear, light golden color. Little head fizzles and dissipates quickly. Aroma is Brett, faint citrus, light oak, and faint funk. Taste is faint Brett, light grape juice, faint oak, lightly tart with a hint of salinity. This is very smooth. Light body, thin mouthfeel, high carbonation. An enjoyable beer! Nice!

Bottle... Pours hazy and yellow with a gushing, foamy, white head. The aroma features funky notes of horseblanket, worn leather, woodiness and a fruity, citric component Ė Iím going with lemon. Light-bodied and watery with zippy carbonation. Lemony, tangy, salty flavor followed by a slightly salty aftertaste. Salty? Could be my taste buds needing a reboot, but thatís what Iím picking up here. Bottle courtesy of newcigarz!
Note: Iíve picked up saltiness in two beers tonight. Neither was a gose or an oyster stout. My taste buds may be tainted.
