Serenity is our aptly named 100% Brettanomyces fermented beer. We are one of only a handful of breweries in the US doing 100% Bretta fermentation. That said for our first one we wanted to do it in the farmhouse style that bretta entered the Belgian brewing world. Serenity is light in color with a subtle golden haze, the nose bursts of white grape, mango, pineapple and old leather. The flavors are similar to those found in New Zealand white wines and notes of guava and grape skin stand out leading to a well-rounded finish.

Draft from the downstairs taproom. Pours a bright hazy gold. Nose of bright lemons, lemon oil, hay, some barnyard funk, acetic acid, and more lemony Brett. Taste adds a hint of sweetness but mostly a nice pucker. Super approachable and refreshing yet still big and flavorful and wonderfully sour. I could have drunk a pitcher.

Bottle at RBESG 2016 Grand Tasting Part 2, Brew Pub Le Sec. Very hazy straw to golden with a white head. Aroma of big Brett funk, barnyard, manure, woody notes and light citrus. Flavour is light sweet and light to light moderate sour. Light to medium bodied with soft carbonation. [10-07-2016]

Bouteille achetée à La Mise En Bière - De couleur jaune pâle avec une fine mousse blanche qui disparait assez vite - Au nez tout de suite des brett, légèrement vineux, très boisé, épicé, florale et legerement fruité, on sent légèrement le blé, sûrement acide, nez complexe - En bouche toujours beaucoup de fût, sûrement un fut blanc, floral, peu acide étonnement, épicé, blé, les brett sont toujours la et apporte ce côté funky, superbe - Corp léger/moyen, amertume moyenne, carbonation vivante, sèche et funky, final fut bret et blé - Très bien réalisée, j’aime beaucoup ces bret et le fût, dommage que ce dernier soit si présent

2 yr old bottle from brewery. Pours mostly clear yellow/gold. Aroma is funk, tropical fruit esters, pale malt, wheat, oak, and some light barnyard notes. Flavor is crisp and dry with some brett character, light fruit esters, faint oak, and a dry finish with some soft tartness. Light/medium body.

500ml bottle. Brett funk aroma with vinous white wine and light fruit notes. Pours cloudy, light golden colored with one finger of white head that has good retention and excellent lacing. Starts with Brett funkiness with light fruity notes. Finishes dry and tart with vinous white wine flavors mixed in with the Brett. Nice Brett beer.

Pours hazy light yellow with a large frothy white head. Aromas of orange, citrus, oak, funk, bretta, green apples. Taste is floral and fruity with a prominent funkiness. Mouthfeel is fairly light bodied with medium carbonation and quite dry.
