Serenity is our aptly named 100% Brettanomyces fermented beer. We are one of only a handful of breweries in the US doing 100% Bretta fermentation. That said for our first one we wanted to do it in the farmhouse style that bretta entered the Belgian brewing world. Serenity is light in color with a subtle golden haze, the nose bursts of white grape, mango, pineapple and old leather. The flavors are similar to those found in New Zealand white wines and notes of guava and grape skin stand out leading to a well-rounded finish.

Draft from the downstairs taproom. Pours a bright hazy gold. Nose of bright lemons, lemon oil, hay, some barnyard funk, acetic acid, and more lemony Brett. Taste adds a hint of sweetness but mostly a nice pucker. Super approachable and refreshing yet still big and flavorful and wonderfully sour. I could have drunk a pitcher.

Picked up a bottle of this over Labor Day weekend when I was in North Carolina. Poured a slightly pale yellow color, slight haze with a quickly dissipating white head, which leaves just a wispy white head. Aroma is barrel notes, brett, funky notes. Tartness, with some nice woody character and a decent amount of apricot and light peach. Incredibly drinkable thanks to a lower ABV. Perhaps less complex than other similar beers, but incredibly tasty.

Bottle shared with Brian and Edgar. Small snifters. Pours a straw colored with a frothy white head. Some lacing. Aroma is pineapple, passionfruit, banana, and white wine grapes. The taste is white wine, mango, pineapple, slight funkiness, and cereal. Very high carb so it is rather champagne like. Refreshing. Finish is fruity and bubbly.

Bottle. Pours a clear pale straw color. Aroma is Bretty pineapple, white wine, light melon, with a crisp minerally quality. Taste is likewise crisp and easy-drinking, with pineapple, lemon, and oaky tannins, and lots of spritzy carbonation, yet also a buttery chardonnay finish. Tasty, if relatively simple.

Not the best sour/farmhouse I've had but it's good. The aroma is relatively bland and the flavor doesn't have much beyond the tartness.

16 oz. bottle from Lighthouse. It pours a hazy pale yellow color with a nice fizzy white head. The aroma is very funky with some pineapple, oatmeal, guava, vanilla and mild phenolics. Brett C at its finest. The flavor is similar with lots of pineapple, spice, funk, guava and some mild tartness near the finish. Hardly any malt. Medium bitterness with low phenolics. This was a super fun beer and a nice showcase of brettanomyces.
