A collaboration of 3 brewers, 3 nationalities and 6 ideas.
We collaborate to learn, experiment and enjoy. With this beer we have explored new ideas, techniques, ingredients, combinations and processes.
Kelly Ryan from Good George Beer in NZ, Brett Ellis (originally from the US) from the Wild Beer Co, and Mark Tranter from Burning Sky Brewery have used their combined knowledge and experiences to create an incredibly unusual and complex beer, at every opportunity they have sourced an amazing ingredient or tried an alternative technique.
Grain – Spices – Yeast – Wood – Fruit – Flowers
Somerset Sharpham Park Spelt has been used for a full body. Pink peppercorns give a gentle sweet spiciness. Saison and Brettanomyces yeast strains lead to a dry spicy character that will continue to evolve. Wood-ageing in French red wine barrels for 4 months adds depth and oak. Passion-fruit brings a tart tropical fruit character. The 4 month ageing process has been finished off with amazingly tangy Hibiscus flowers.
That is one shnoodlepippin beer!

330 ml bottle into tulip glass, no bottle dating. Pours lightly hazy deep orange/amber color with a 1 finger fairly dense white head with good retention, that reduces to a spotty lace cap that lingers. Light spotty lacing clings on the glass. The pour looked a bit syrupy, oddly. Aromas of lightly tart lemon, pineapple, passion fruit, berry, pear, red wine, peppercorn, wheat, cracker, hay, straw, floral, oak, light funk, and herbal/yeast earthiness. Very nice aromas with good balance and complexity of fruity/earthy yeast, spice/fruit, wine barrel, and moderate bready malt notes; with good strength. Taste of lightly tart lemon, pineapple, passion fruit, berry, pear, red wine, peppercorn, wheat, cracker, hay, straw, floral, oak, light funk, and herbal/yeast earthiness. Light-moderate herbal/yeast spiciness and light fruity/acidic tartness on the finish; with lingering notes of lemon, pineapple, passion fruit, berry, pear, red wine, peppercorn, wheat, cracker, hay, straw, floral, oak, and herbal/yeast earthiness on the finish for a while. Very nice complexity, robustness, and balance of fruity/earthy yeast, spice/fruit, wine barrel, and moderate bready malt flavors; with a great malt/yeast/spiciness balance and zero cloying flavors after the finish. Medium carbonation and body; with a very smooth, moderately creamy/bready, and lightly sticky/acidic balanced mouthfeel that is nice. Alcohol is very well hidden with minimal warming present after the finish. Overall this is a very nice fruit/spiced wild ale style. All around good complexity, robustness, and balance of fruity/earthy yeast, spice/fruit, wine barrel, and moderate bready malt flavors; and very smooth and easy to drink. A very enjoyable offering.

Bottle from one of 2 places, can’t remember where! Pours a light hazy orange with a wispy white head. Pepper, tangerine, soap aroma, the passion fruit really comes through. Good sweet/sour fruit balance. Can really taste the passion fruit in there. Quite a tart edge. Very nice.

Deep orange color, small white head. A really thick, syrupy liquid coming out of the bottle. Certainly sick/ropey. Complex composition of aromas including spices, citrus, pineapple, wood, sour notes and funk. The peppercorns are really coming through. Peppercorns are dominant in the taste as well, followed by lemon, bitter lemon peel, floral notes, funk and passion fruit. Medium body, soft carbonation, syrupy texture.

UPDATED: DEC 29, 2015 2 oz. sample at Liquor Express. Hazy orange, with no head. The nose is very floral, lemon zest, light pepper, nectarines, lactose, and a bit of white wine. Sweet up front, with a sharp, tart bite and a subtle, balanced, dry and bitter finish. Light to medium body, crisp, a little acidic, and a bit creamy. This is a wonderful sour, with great complexity and a lovely flavor.

Small bottle in a tulip. Pours copper with an off-white head. Aroma of passionfruit, too many herbs, too much pepper, some sourness, caramel and pale malts, and oak. Flavor the same. Average texture. The one thing they got right was the fruit, but everything else is way off.

Pours a salmon pink with a finger of white gaseous bubbles. Nose is faint but interesting with light lemon peel, spicy floral, melon rind, musty fruit, earthy tea. Palate follows with lots of complexity but still a soft handed approach that lets the interesting flavors roll in and out of profile. Orchid, lemon, tropical, earthy, spicy.

Bottled, 330ml from The University Club, Oxford, many thanks to Kabi for generously donating this. Clouded gold with white head. There is a sour, tart note to this from the start, bitter lemons but then a light, spicy character shows through. Drying resinous notes come through later and a sweeter fruity note. Jolly good.
