Barrel-aged and using a variety of yeasts; a study in patience Barrel ageing, blending and using different yeasts, this embraces our love of the unpredictability of wild yeast with the subtlety and complexity of maturation in oak barrels. A study in patience, it takes at least 90 days for the wild yeast to work its magic. Modus Operandi is the perfect accompaniment to red meat and game dishes, such as duck or venison, a beer that could easily replace a red wine on the dinner table. A transformation of an old English ale into a beer that is Wildly different. A unique, dark, flavourful beer with a smooth, rich, full body and complex fruit flavours of berries, sweet cherries and tannins.

Keg @ The White Horse On Parsons Green. The pour’s a soupy, murky reddish brown color with a tiny off-white head. The nose is salted dark chocolate, tangy red berry, balsamic, some wood. The taste is more tangy red berry jam. Slightly tannic, more balsamic. Slight hints of brett and buggy wood. These funky flavors are supported by a fat malty body. Notes of chocolate, charred grain, ash and leather. Dry woody finish. Easy to drink, this beer wears the ABV well. Overall, really nice effort. Thought-provoking stuff. I’m looking forward to trying more Wild beers!

Pours a dark brown with no head. The aroma is stewed prunes, plums and other dark red fruits. It has a very red wine taste to it, red berries, tannins and a hint of sour. It’s very good.

Présence d’un mince col mousseux et d’une fine dentelle sur le verre. Saveur: Goût de fruité légèrement sûrette avec une pointe de balsamique. Longue durée de l’arrière goût. Palette: Le corps est moyen avec une texture vineuse. Moyenne effervescence en bouche. Légère présence de balsamique en arrière goût. (Rating #6447)

Pours hazy dark brown, with a creamy tan head. The aromas are cherries, oak, vanilla, red wine (or port?), leather, tobacco, and horseblanket. The taste is moderately sour, with some subtle sweetness in the aftertaste. The mouthfeel is mouthpuckering, both from oak tannins and sourness. The carbonation is medium-low, and the body is full. One of the most complex, interesting and tasteful beers I’ve ever had.

Bottle. Ruddy brown color with a small tan head. The aroma has cherries, vinous notes, wild yeast, leather, and oak. The flavor is nice, both sweet and sour. Quite tasty. Has a cherry and pinot noir note with a jammy but tart finish. Like a Flemish red if I had to peg it. Medium-full bodied with average carbonation. Quite good.

Tap @ In De Wildeman, sample size, courtesy of Simon, thanks! Dark brown color, hazy. Off white head. Aroma’s: sour, vinegar. Retronasal it’s sour but also somewhat sweet, like a true Flemish red/brown ale. Moderate sour and moderate sweet flavor. Medium bodied. Rather dry finish, with no new flavors. Quite nice.

une robe brune, peu de mousse, un nez puissant et complexe sur des fruits aigres et une note balsamique et une bouche puissante à la fois fraîche et ample, longueur kilométrique et finale parfaitement équilibrée. Grande bière.
