Barrel-aged and using a variety of yeasts; a study in patience

Barrel ageing, blending and using different yeasts, this embraces our love of the unpredictability of wild yeast with the subtlety and complexity of maturation in oak barrels. A study in patience, it takes at least 90 days for the wild yeast to work its magic.

Modus Operandi is the perfect accompaniment to red meat and game dishes, such as duck or venison, a beer that could easily replace a red wine on the dinner table.

A transformation of an old English ale into a beer that is Wildly different. A unique, dark, flavourful beer with a smooth, rich, full body and complex fruit flavours of berries, sweet cherries and tannins.

Keg @ The White Horse On Parsons Green. The pour’s a soupy, murky reddish brown color with a tiny off-white head. The nose is salted dark chocolate, tangy red berry, balsamic, some wood. The taste is more tangy red berry jam. Slightly tannic, more balsamic. Slight hints of brett and buggy wood. These funky flavors are supported by a fat malty body. Notes of chocolate, charred grain, ash and leather. Dry woody finish. Easy to drink, this beer wears the ABV well. Overall, really nice effort. Thought-provoking stuff. I’m looking forward to trying more Wild beers!

Deep dark amber/brownish under a thin ring of ivory foam. Wild and funky tart nose that’s slightly malbec-ish, meaty, deep earthy red berries and something semisweet and a touch herbal. Enticingly good. Big wild flavor that hits with a load of funky tartness without much pucker--all flavor no acidity! Just a mellow funky tart red berry and red wine barrel tone that’s got some gamey red meat tone, mild earthy fruity sweetness and a oaked, wild, red wine-esque finish. Amazing.

Pours cloudy brown with flat head. Aroma of cherries, red currant, bretta, almond icing. Taste is light to medium berry tart up front with a lingering sticky sweet finish. Light and sticky body with soft carbonation.

Cerveja marrom-avermelhada, com pouquíssima espuma, aroma intenso, interessante e complexo, com mistura de vinagre, frutas vermelhas, um pouco de malte. O sabor é menos envolvente, mas ainda muito bom: a acidez e o sabor frutado mais intensos no começo, o final doce e amadeirado. Um pouco rala, corpo baixo pra médio, baixa carbonatação, No geral, uma ótima cerveja, equilibrada e saborosa.

Bottle, bought @ YNWA, Kolding. Pours deep red with a small, creamy white film head. Aroma has raspberry, cherries, oak, light toasted malts, mild strawberry. Medium, årickly carbonation, fine sry and quite creamy mouthfeel. Flavour is elegant, cherries, strawberry, vinegar, light red apple and mild apple. Elegant oaky dry mouthfeel.

Precious Metal, Brooklyn tap: pours reddish brown with almost no head at least on the ridiculous pour into a pint glass that they gave me. Aroma is cherry, wood, vinegar, and sugar. Taste is sour at first. As others have said, it is a little like a Rodenbach. A bit much to go through for a full pint. Not too sweet, but somewhat.

Bottle 33cl, an amber brown beer almost without head. Nose is on read vine, oak, vinegar and cherries, very nice. Taste is medium sour, light sugar, aroma is on vinegar, cherries and oak but less powerful that the nose suggested. Finish on berries, cherries, metallic with some acid touch, nice beer.

Dark brown color, creamy beige head. Aroma has red wine, cellar and oak. Medium-bodied. Tart, funky, red winous tannines, oaky, cherryish, a bit cellary. Tannine-tart aftertaste. Some similarities to Rodebach. For purpose I think.

Bottle shared at a tasting at Alexey & Raphaela’s place. Cloudy brownish with beige head. Sweetish aroma with notes of dried fruits, yeasts, red wine and wood. Very sour flavor with lots of wood, red wine, vinegar, acetic, sweetish with sharp sourness, dry. Silly texture, medium-bodied. Great.
