COMMERCIAL DESCRIPTION
The first beer we’ve brewed is a beer that really shows what we are all about, our Modus Operandi, if you like. We love the effect oak barrels can have on our beers and we love to experiment with different ingredients and yeast strains. Unfortunately barrel-ageing and wild yeasts both take a long time and its a very unpredictable process… Our Modus Operandi embraces our love of the unpredictability of wild yeast and subtlety and complexity of maturation in oak barrels. It is a study in patience as it takes at least 90 days for the magic of the wild yeast and the oak barrel to work their wonders on M.O. changing an old English ale into a beer that is Wildly different. A unique, dark, flavourful beer with a smooth, rich, full body and complex fruit flavours of berries, sweet cherries and tannins. M.O. can be drunk fresh or put away in your beer cellar to age and mature for years to come. When conceiving an idea for a new beer we always think about how the beer might be enjoyed. For us, this is the perfect accompaniment to red meat and game dishes, such as duck or venison, a beer that could easily replace a red wine on the dinner table. On this occasion we have filled single use Bourbon barrels with the base beer for M.O. and then added some wild yeast.

33 cl bottle. Pours hazy amber to brown with a huge tan head. Aroma is roasted malty and light breadish. Roasted malty,light sweetness. Bitter, toasted malty and caramelish. Dry and roasted into a bitter finish.

Cask at IMBC ... deep brown ... thin tan head ... soft toffee roast ... ligth sourness to nose ... tart blackcurrant ... soft toffee malt ... juict malts and something odd. Ok but there somethign im not sure about ... reading description i see why... yeah not really me

Light palate, dry and minerally. Lactose malt. Brett. Seltzer minerals. Mild red berry fruits. Refreshing. Not bad at all if a bit dry.

Bottle at Craft Beer CO, London. Cloudy deep golden/brown beer with a huge lasting beige head. Woody, oaky aroma, leather, barnyard, figs, raisins, berries, caramel, roasted, ash notes. Woody leather aroma, barnyard, vinous, raisins, floral notes, caramel. Kinda interesting.

On tap at the Three Tuns, Bristol 14/10/2012. Deep, reddish brown with no head or carbonation - pretty much pancake flat. Aroma of red berries, chocolate, vanilla and wood. Flavour had more chocolate, molasses, cherries, a hint of marzipan and slightly sweaty, tart finish. A highly unusual beer, that would have been truly excellent with a bit more life to it.

Bottle at the Euston Tap. It pours deep brown, with a thick beige head. The nose is spice, oak, vanilla, vinous, earth, Dandelion & Burdock, blackcurrant ham and raspberry yoghurt. The taste is oak, spice, leather, red berry (particularly raspberry), brett, vinous, jam, port and vanilla, with a dry, jammy finish. Medium body and moderate carbonation. Great depth of flavour. Interesting and well balanced. Delicious.

Tap at White Horse Parsons Green, Old Ale Festival - 23/11/12. Murky chestnut brown. Nose is toffee, light smoke, berry fruits. Taste comprises berry fruits, toffee, bitter tones, light hoppage. Medium bodied, soft carbonaton, some bitterness in the finish.

Keg @ The White Horse On Parsons Green. The pour’s a soupy, murky reddish brown color with a tiny off-white head. The nose is salted dark chocolate, tangy red berry, balsamic, some wood. The taste is more tangy red berry jam. Slightly tannic, more balsamic. Slight hints of brett and buggy wood. These funky flavors are supported by a fat malty body. Notes of chocolate, charred grain, ash and leather. Dry woody finish. Easy to drink, this beer wears the ABV well. Overall, really nice effort. Thought-provoking stuff. I’m looking forward to trying more Wild beers!

330ml bottle. Pours a very hazy dark brown with a large head. Aroma is woody, vanilla and bourbon. Taste is oaky with vanilla to start. Vanilla, chocolate and bourbon on the finish. A bit too fizzy. The beer Innis & Gunn wishes it was.

Bottle at home from source cafe. Pours hazy brown with pillowy toffee tinged head. Chestnut highlights. Spicy hay and wood notes on the nose with underlying vanilla coke, rich alcohol and a touch of pear (yeast esters rather than higher alcohols). Balsamic vinegar replaced by earthy blackcurrants. low carbonation, fairly dry with a lengthy finish. Coffee, cola, bitter malt, medium bodied. A complex sipper.
