Blending Ninkasi beer with cider and barrel age it on brandy barrels. Beautiful idea. The nose is complex: oaky, lemon, apples, brett. The taste is boozy, grapes, apples, beautiful tart (lactic acid), roze snoepkes, and minerals.
The beer could improve when it is less boozy in the end. Reminds me of Petrus Aged Pale Ale. Could be a very good beer to age. thanks berntholer for the gift!

I think this is a bit ok really, the sour is much less than it could be, the aroma has some oaken unless I’m making it up, the overall is quite nice. .... for a sour beer.

How : bottle Appearance : pale yellow with a small off-white head, lots og sediments. Aroma : sour berries, apples, floral. Palate : medium body, average carbonation.

(Wild Beer Ninkasi Premier Cru) Bottle 330 ml at home, served into a snifter, ABV 10%
Bright, sunny yellow colour on a hazy body, with lots of bits and pieces floating around. Tall and thicj snow-white head, with quite good retention, leaving medium lacing behind.
Nice aroma, lots of brett funk character, on the background fruity notes, peaches, apricot, yeast.
Very tasty! Some alcohol notable, sugar, a touch of sourness, cognac, grapes, champagne like. Fruity notes surfacing on the aftertaste.
Medium body, good carbonation. Slightly tart palate.
Quite good this one, interesting.

15.1.2015. Slightly cloudy but big sediments come to glass immediately. Aroma has sour apples, oak, apple cider, yeast. Lambic meets cider. Ripe fruits, apples, alcohol, yeast, spices, tart, white wine. Interesting but slightly too boozy.

Bottle. Hazy golden with a whitish head. Tart fruityness, barnyard, sour apples and oaky sherry notes in aroma. Quite smooth. Sweet apple and boozy notes in taste. Hints of vanilla and lemon in the end.

Have to say I am loving the offerings from this brewery. They are rich and complex and are pushing the boundaries. This beer/masterpiece is no exception. The brett characters while prevalent do not dominate the beer and integrate well with the subtle richness that just lingers on the palate. As it warms up it is becoming more honeyed and velvety.

Little cloudy blond beer, small irregular creamy white head, non adhesive. Aroma: very fruity, yeasty, bit funky, peaches, other fruits, overripe kiwi. MF: soft carbon, medium body. Taste: very funky, sourish, lemony, pretty dry, spicy touch, tart, bitter notes. Aftertaste: hoppy, lemony, some grapefruit, alcohol, pretty boozy, sour finish, bitter hops. Interesting.

Keg at the craft beer co. Light hazed golden / straw coloured pour with a nice frothy white head. Aroma is subdued Belgian yeast esters, sweet apple, raisin and a hint of caramel. Flavour is vinous, grapey fruit, oak, tangy grape and Apple, semi sweet, grains with a hint of honey. Lingering wood tannin and a hint of metal / blood and tart funky grape fruit. . I think I prefer the original. Palate is medium full, highish spritzy carbonation.

Thanks to Beerlover_Ben! 330 ml. bottle sampled @ RBBWG IV. While I greatly appreciate a beer not having honey – nothing should honey ever in it – there is still something odd about calling an apple beer Ninkasi & it having no honey or grapes for that matter in it.Golden, huge floraters, lots of them; Nose is sour apple, light cider, pear, touch barn. Taste is sour apple, light dry cider mixed with some white sugar sweetness, brett, faint lemon, light mineral touch. Light carbonation, touch cider-like body. Way better & more interesting than the rather bland base beer.
