Part of the Barrel Trinity 2013 series - came about after a visit to the Somerset Cider Brandy Company at Burrow Hill where Julian Temperley showed us around his amazing farm. On smelling some of his used barrels we thought they would be the perfect vessel to age some of our Ninkasi in. The cider brandy flavours naturally combine beautifully with the apple flavours in the beer and the farmyard brettanomyces character in the beer has become more dominant. This is a beer we always wanted to make and we are delighted to say, it doesn’t disappoint. Not as highly carbonated as the "normal" Ninkasi, this is softer, more mellow, with a long lingering fruit character.

Hazy orange color, small white head. Cider/white wineish apple fruity-sourish nose. Medium-bodied, crisp carbonation. Belgian yeasty, apple/calvados flavor, orange peels, fruits, alcohol and light tartness. Some similarities to Belgian "Champagne beers" like Deus, but also a bit American-Belgo-like.

Unclear medium orange yellow color with a average, frothy, good lacing, mostly lasting, off-white to white head. Aroma is moderate malty, pale malt, riped fruit, leather, apples. Flavour is moderate to heavy sweet and light light acidic with a long duration, apple, leather - brett, wood, dry. Body is medium, texture is oily, carbonation is soft, finish feel is light alcoholic. [20131229]

Bottle shared at Bruce’s pad, big thanks to Leighton, 16/01/14. Lightly hazed golden with a moderate white covering. Nose is tangy green apple, woody orchard notes, citric fruits, yeast esters, tarte fruit skins, bitter orange. Taste comprises toffee apple, light booze, tarte fruits, dank orchard, light funk. Medium bodied, fine carbonation, warming booze in the closure. Ok affair, getting the cider twang from the BA, the booze is a little harsh in places though.

Took a few minutes for the aroma to come through this deep golden beer which pours with a good head. Smells of apple skins and maybe grass. The palate is dry and lingers, but this is neither a saison of Dupont sophistication nor the funkiness of others. Decent hit of booze, possible cidery start, but the taste disappers pretty quickly. Nice to sip and work through, but not great. This either needs to be more refreshing and lighter or more complex. Kind of does neither.

Bottle from Hop Hideout, Sheffield. Hazy, dark straw colour. Film of white head. Homemade cider. Pear drops. Barley sugar. Some marzipan. Taste is woody dry. Some cider acidity. Underlying, toffee apple sweetness. Thick, vintage cideresque, chewy palate. Dry finish. Hint of sweetness remains, though. Comes across nowhere near 10%. The made up word "cideresque", looks lovely, I think.

Bottle shared by Leighton at Bruce’s. It pours hazy golden with a small yellow-white head. The nose is pretty freaking sweet... candy, pear drops, apple, melon and such like. The taste is sweetish, apple, light tartness, pear, sherbet, dough, wood, Appletizer, earth and some warming alcohol with a dry finish. Medium body, moderate carbonation and foamy mouth-feel. Perhaps a touch sweet, but it does taste rather nice. Balanced. Good work.

Bottle cheers to Leighton. Pours semi clear golden with a fluffy white head leaving nice lacing. Nose is quite booze forward with plenty of bright lemon and apple, some pepper and sticky apple like brandy. Taste is huge on apple, pear juice and lemon tang. Plenty of bread and spice with a boozy kick on the finish. Decent

Bottle shared in London - picked up at Utobeer. Pours clear gold with a frothy white head. Rich pale malt nose, some Belgian yeast, ripe lemon. Medium sweet flavor with a bit of alcohol kick, sponge cake, orange meringue, caramelised sugars. Medium to full bodied with fairly lively carbonation. Mild warmth to finish, more citrusy meringue, slight yeast character, ripe lemon. Good beer.

Lightly hazy gold beer, tidy off white head. Palate is light and a little airy. Light thin malt that carries a little cream, it integrates well with the mellow calvados. Light spirity tang, but no heat. Touch of vanilla. Finishes smooth and soft. Nicely done!

Bottle at home from Beer Ritz
v similar to regular ninkasi but has lost its freshness, in its place some warming alcohol and vanilla notes. Still tart but somehow less Belgian yeast notes. A nice warming sipper but after having been wowed by the unaged offering, this one was a little disappointing.
