COMMERCIAL DESCRIPTION

Part of the Barrel Trinity 2013 series - came about after a visit to the Somerset Cider Brandy Company at Burrow Hill where Julian Temperley showed us around his amazing farm. On smelling some of his used barrels we thought they would be the perfect vessel to age some of our Ninkasi in. The cider brandy flavours naturally combine beautifully with the apple flavours in the beer and the farmyard brettanomyces character in the beer has become more dominant. This is a beer we always wanted to make and we are delighted to say, it doesn’t disappoint. Not as highly carbonated as the "normal" Ninkasi, this is softer, more mellow, with a long lingering fruit character.

Pours hazy golden color with frothy - but substantial - clean white head. Clean cider-apple aroma, without the unpleasant farmhouse notes. Almost like a perry with more depth thanks to some sherry, citrus notes and a dash of light malt. Fairly sweet flavor with citric-acid pangs. Yeast. Very light for the abv and extremely quaffable. Refreshing brett-sour dryness in the finish. A little warming alcohol in its wake. Very nice.

Hazy yellow body, white head. Aroma has bretta all over it. Nice apple, sour toasty malt, clove, spicyness from the yeast. Really intense and sourly crips aroma. Flavour is bit flat and alcohol forward. The apple, spices and malt are more intense in flavour. Not so fresh that aroma.

Hazy yellow golden colour with a small white head. The aroma is yeast, tartness, brett, fruits, mild alcohol and mild spices. The flavour is alcohol, mild sour notes, mild brett and some more alcohol. It’s almost boozy. The delicacy of the "normal" version is gone. Mild sourness in the aftertaste. To be honest I was expecting more...

Pours hazy golden with lasting white head. Aromas are apples, vinegar, pepper, yeast, light fruits. Taste is quite sweet, tart/sour, only light bitter and light spice. Finish is dry warm alcohol and apples - only the hint of yeast to remind you that you didn’t just sip a dry scrumpy. Really drinkable if you like some sourness in a beer.

Bottle. Cloudy golden with white head. Aroma is funky, sharp, cider vinegar, earth, musty. Taste of sour apples, yeast, hint of vinegar, very sharp, funky. Quite sweet and heavy with some hot alcohol and a slightly tart finish. A bit much, I couldn’t drink it.

Rusty golden with a healthy whisked white head. Sumptuous apple and peppery sawdust nose. Rich sweetness abides here, warping the once yeasty tang of the Ninkasi but moving it off centre rather than planking it. Thick oaky malt sweetness in the middle, with a soft boozy skewer. As if someone had left the ripest toffee apple in the fire a bit too long. Carbonation has kicked on since bottling, and impressive Brett crunch on the finish shows its not going to flatten out any time soon.

330ml bottle from Great Grog. Pours clear golden yellow, long lasting white head. Aromas of cider and brandy, boozy motherlover. More cider than beer. Bitter taste, light apple sweet, good balance. Loved this.

Bottle from Rehills, Newcastle. Hazy golden coloured with a cider-like apple fruity and citrus flavour, brandy/sherry notes and a warming, creamy vanilla, oak and spicy tart fruit finish. Tastes way below it’s 10% ABV, Excellent!

Bottle from Kris Wines. Comes out of the bottle hazed very effervescent bubbly pale amber, with a light fluffy medium foam head. Nose is Champagne yeast, bready toasty yeast, citrous lemon, light grin and yeast funk, light horse blanket, little sour tartness, summer berry sour. Taste is lemon citrous, tangy yeast, Brett saison yeast, dry Champagne like mouthfeel, light apple juice. On the finish is has a dry tangy fruitiness.
