COMMERCIAL DESCRIPTION
Bubbles + Apples + Wild Yeast photo (16) Named after the ancient Greek goddess of beer, this is an equally divine Belgian-style saison with a copious amount of New Zealand hops, freshly harvested Somerset apple juice and wild yeast added to the mix. However, we like to take things just that bit further (it’s the Wild way!) — once bottled the beer undergoes a secondary fermentation with champagne yeast, giving it a brisk spritziness on the tongue. Serve chilled in a champagne flute to allow the bouquet of playfully aromatic notes to be fully appreciated. Take a sip to enjoy a further cascade of striking and sensuous flavours alongside the carefree champagne-like spritziness. The long, dry finish is both refreshing and complex.

App.: Cloudy deep golden with a full, tight off-white head. Aroma: Funky, bright, citrusy, bitter herbs, fruity esters, some cider character (or power of suggestion...), peppery/grassy hops, lightly boozy. Palate: Medium+ body, elegant carbonation. Flav.: Much like the nose – fruity esters, a funky/citrusy punch, bitter herbs, light apple cider, peppery/spicy notes, a bit of alcohol; dry with decent bitterness and a long, funky, complex finish.

Dang it! Now I gotta go buy a bunch more bottles!

Complex ’wild’ fruit beer, at In De Wildeman for Carnivale Brettanomyces. Very stable, irregular, dense and thickly lacing egg-white head over a deeply hazy golden blonde beer. Complex, refined and very fruity aroma of apple cider, banana, gooseberries, sherry, wet hay, chicken broth, whisky, leather, sweaty grains and cava. Vivid fruity onset, light but refined sweetness, peachy, pineapple, gentle carbonation just fit for this kind of beer, light sourish accent, caramelly basis, bready with a complex, dry and spicy yeastiness in the end, bittering grassy hops but not too prominent as it should be, alcoholic warmth but nowhere astringent and a long, artisanal cider-like, drying tartness. Very complex, but all the elements are well balanced towards each other; probably the best beer from this brewery I had so far. Well, in honouring the ancient beer goddess of Mesopotamia, what could go wrong...

Keg at smallBAR, Bristol. A slightly hazy golden colour with a thick white head. Aroma of green apple, Belgian yeast, wheat, lemon, some grapefruit, white grapes and spicy hops. Taste of Belgian yeast, slight green apple, white grapes, wheat, lemon, grapefruit, some orange, some bread, white pepper, some funk and spicy hops. Medium bodied and moderate carbonation. A slightly tart, peppery hop bitterness in the finish. Very aromatic, flavours of fruit, citrus, yeast and pepper complete this beer. Very nice and very champagne like.

Tap at In de Wildeman. Hazy light golden with white head. Very mineral, salty dough, light alcohol, rotten apples, kumquats. Light sour and salty. Medium bodied. Strange.

Draft at In De Wildeman. Pours cloudy light orange with a white head. Aroma of weedy hops, fruits and light citrus. Flavour is light moderate sweet and bitter with some Brett funk coming out in the palate. Medium bodied with soft carbonation.

Hazy golden pour, with a huge rocky, frothy white head. General fruity aroma, with a sharp, green, acidic hop aroma. The apple juice doesnt seem to show up much, but threre is a nice papperiness, and clean crisp hoppy finish. The wild yeast adds hinds of tartness but no funk like i was hoping for. Its a strong saison with some nice white wine acidic qualities from the nz hops.

750 ml bottle from LCBO. Pours a cloudy golden orange with really big, puffy white head. Aroma is spicy and fruity with apple/pear, pepper, some grainy character and a little acidity. Flavour is quite fruity/yeasty with notes of apple and pear, some acidic white wine character, peppery spice and some graininess. A little booziness in the finish, but pretty subtle. Solid.

750 mL bottle. Hazy yellow with a huge, foamy white head. Smells and tastes like a solid tripel. The apples are non-existent in the aroma, subtle in the flavour. No booze. High carbonation; appropriate for the style. Nice beer.

Pale bubbly golden pour. Thick moussey white head. The nose is spicy and a bit appley. There is some light citrus and a touch of grassiness as well. There is a little bit of lightly peppery hoppiness. There is a touch of kiwi, pear and light yeastiness. Light tartness but a touch of light flintiness. Fairly assertive bitterness for a Belgian-style brew. Some kiwi and a lingering bit of white pepper. There is a fairly assertive hoppiness. It’s a good beer, but not a great one.
