COMMERCIAL DESCRIPTION
Bubbles + Apples + Wild Yeast photo (16) Named after the ancient Greek goddess of beer, this is an equally divine Belgian-style saison with a copious amount of New Zealand hops, freshly harvested Somerset apple juice and wild yeast added to the mix. However, we like to take things just that bit further (it’s the Wild way!) — once bottled the beer undergoes a secondary fermentation with champagne yeast, giving it a brisk spritziness on the tongue. Serve chilled in a champagne flute to allow the bouquet of playfully aromatic notes to be fully appreciated. Take a sip to enjoy a further cascade of striking and sensuous flavours alongside the carefree champagne-like spritziness. The long, dry finish is both refreshing and complex.

750ml bottle from LCBO. Clear golden body, big white fluffy head with excellent retention, slightly effervescent. Aroma of herbs, mineral water, hay, apple, peppercorn, grapes. Taste of spices mostly peppercorn, herbs, mild hop bitterness, fermented apples. Late warming effect. Lovely.

Bottle. ( 750 ML ) Cloudy yellow appearance. unusual citrus flavour and slightly bitter. So easy to drink considering its flavour-in fact dangerously easy to drink. Wasn’t sure if the ingredients would come together and work. They did.

Wow what a nice tasty beer. Saison meets some citric hops with a strong Belgian twist. Dangerously easy to drink. Smooth nice body and a fine carbonation. Citric, fruity, Belgian yeast and some spices. Recommendable!

Pours very carbonated, with a nice fluffy head. Aromas of apples Fruity, complex, though not as fruity as many saisons. Finishes dry with a lasting bitterness. Smooth, though a few sips had a striking alcohol taste. An exemplary saison. Delicious.

Bottle at home. Pours a slightly hazy straw color with a big, creamy, off-white head. Fruity aroma with apples but also lots of pale malt, hay, spices and lemon juice. The flavor has more hay, grass, hops, alcohol warmth and chili (!) in the aftertaste. A little dry in the end. Has a slick and light mouth feel, medium body and a light to medium bitterness. A very complex beer with an incredibly interesting aroma. The flavor lacks a bit fruitiness. Would be great with cheese.

4 oz pour on draft at ChurchKey. Listed as Iduna Cru. Hazy yellow with off-white head. Aromas of funk, wine, yeast, light acetone. Tastes of funk, tart dark fruit, light vinegar, oak, apples. Light body with a dry finish. Strange.
