Bubbles + Apples + Wild Yeast photo (16) Named after the ancient Greek goddess of beer, this is an equally divine Belgian-style saison with a copious amount of New Zealand hops, freshly harvested Somerset apple juice and wild yeast added to the mix. However, we like to take things just that bit further (it’s the Wild way!) — once bottled the beer undergoes a secondary fermentation with champagne yeast, giving it a brisk spritziness on the tongue. Serve chilled in a champagne flute to allow the bouquet of playfully aromatic notes to be fully appreciated. Take a sip to enjoy a further cascade of striking and sensuous flavours alongside the carefree champagne-like spritziness. The long, dry finish is both refreshing and complex.

Bottled. The Aroma has duvel like earthy yeast, green apple, lemon peel, light grapefruit. Hazy, yellow coloured beer with a big white head. The taste is light bitter and has light citric sourness, some bitterness apples and citrus. Very heavy on the stomach qua carbo.

On tap at Proletariat. Pours a hazed gold with a large creamy white head. Musky and funky, lemon and funk. Medium bodied, tart funk, fuzzy musk, chewy wheat, lemon and a bit of tartness with funk. Long fuzzy funk and musk. Tasty.

small sample from 75cl bottle. poured a orange amber colour with a white head. floral fruity hops, apples, sour green apples, oak, yeast, citrus, lemon peel, easy drinkable for the 9%abv. slightly dry, white grapes, pretty interesting

W aromacie owoce, głównie biały winogron i jabłka, lekka dzikość i przyprawy, muśnięcie cytrusa bardzo przyjemny i aptyczny. W smaku winogrona z pestkami, cytrusy z naciskiem na grejpfruta, dzikość, zielone jabłka, lekka przyprawowość, dość wysoka goryczka grejpfrutowa w odczuciu, bardzo pijalne, rozgrzewające w przełyku, choć alkohol dobrze ukryty. Kopie! Złożona, spójna kompozycja, bardzo dobre piwo.

My final Wild Beer release was pulled from the cellar. It is highly unlikely after so many underwhelming experiences that I’ll be trying more unless I find them on draft at pubs in the UK. You should also scroll past unless they happen to be on sale.

Aroma / Appearance - The billowing head surges to half the height of the pint glass before slowly settling down. A golden base with a warm tint shines outward. Lemons, fresh apples, and crisp fruit rise with a bright texture that fools the senses into the promise of something exciting.

Flavor / Palate - Apple pie, lemon custard, and malt stick the tongue for a brief second before fading the instant they hit the throat. With an unremarkable finish it fades away in less than a minute. A so-so beer does not live up to its potential. Whether it be the trip over the ocean or the month spent in the cellar, this release demonstrates that not all experiments succeed. At least one British brewery has a ways to go to catch up with its American competition.

Poured an orangish color with aromas of light fruit, and some spice. Flavors matched the aromas, light fruit, yeast, and some off putting spice, light sourness, but not overly sour.

Hazy golden color. Creamy white head. Full body, lots of funk and farmhouse, a touch of spice. Heavy. Decent stuff.

Keg at Euston Tap, London. Hazy pale golden shade with an enormous fluffy white head. It clings on forever. Aroma hints at slightly wild brett notes. Apples come through nicely in the taste. Drinks super easy for the strength. Clean, classy, nicely balanced. Yum.
