Bubbles + Apples + Wild Yeast photo (16) Named after the ancient Greek goddess of beer, this is an equally divine Belgian-style saison with a copious amount of New Zealand hops, freshly harvested Somerset apple juice and wild yeast added to the mix. However, we like to take things just that bit further (it’s the Wild way!) — once bottled the beer undergoes a secondary fermentation with champagne yeast, giving it a brisk spritziness on the tongue. Serve chilled in a champagne flute to allow the bouquet of playfully aromatic notes to be fully appreciated. Take a sip to enjoy a further cascade of striking and sensuous flavours alongside the carefree champagne-like spritziness. The long, dry finish is both refreshing and complex.

On tap.@ Øst, Stavanger. Pours hazy golden with small white head. Aroma of lemon, honey, drain, flowers, strawberry, metal. Taste sour and bitter with some sweetness.

Bottle @ Home. Pours golden with a white head, lively bubbles. Aroma malt, yeast, light wine / champagnes notes, light sugar, light tart apples. Flavor is light sweet, light tart fruity, malt, yeasty, champagne / winelike notes, tart fruit, grapes, some alcohol. Medium to full, lively carbonation, warming alcohol in the finish. 091016

0.75 l bottle from Alko Arkadia, Helsinki. Apperance is cloudy and pale with a decent head. Taste is at first lambic like sour but palate is sweetish, probably from the apple juice. Very complex, taste evolves in different directions during the drinking of the bottle. Oh, it has champagne yeast also. No wonder there was hints of some white wine too. Interesting and not like anything else really.

Pours a hazy gold, with a big, big head. Nose is very Belgian yeast-y, plus a sharp note. Taste is sharp and refreshing, with a prominent saison note, and not so much of the apples. Palate is mid-bodied, great mouth feel, clean finish.

Light yellow colour with smallish head on top. Aroma has some citrus, sweet fruits maybe some green apples. Taste is very stingy, a bit unpleasant but there is still some sweet fruits and citrus in the background. Hops are very in your face here.

Bottle. Golden. Fruity pale honey on nose, belgy yeasty esters, citrus, some booze, fresh grass. Full bodied. Tripely boozy esters, soft hay, citrus. Apple peel tartness. Kinda crazy, sorta like the flavour tho.

From tap at In De Wildeman, Amsterdam. Aroma is tartish fruits, yeast, apples, malt, straw, some spicy notes, hint of booze. Flavour is moderate sweet and a bit tart with a light bitterness in the finish. Body is medium. Pretty big and fairly complex Saison-ish.

C’est orangé, voilé et garnit d’une superbe mousse soyeuse, dense et veloutée qui s’accroche à la paroi. C’est beau. Les arômes ne sont pas d’une palette connue, du moins peu commune. Ils sont sauvages, sulfureux, gras et champêtres. Les saveurs quant à elles sont fruitées, sucrées et légèrement acidulées. C’est très intéressant à boire, même si mes points de repères sont brouillés. (1950-050916)

75 cl, bottled. Wax sealed. Pours cloudy yellow with a medium head. Aroma: Fruity tones, fermented tones. Citrus, zest. Taste: Medium sweet, pleasant yeasty flavours. Malt and hay. Slight tanginess. Hops. Palate: Medium-full body, some bitterness in the end. Grassy. Dry. Notable carbonation. Nice.
