Bubbles + Apples + Wild Yeast photo (16) Named after the ancient Greek goddess of beer, this is an equally divine Belgian-style saison with a copious amount of New Zealand hops, freshly harvested Somerset apple juice and wild yeast added to the mix. However, we like to take things just that bit further (it’s the Wild way!) — once bottled the beer undergoes a secondary fermentation with champagne yeast, giving it a brisk spritziness on the tongue. Serve chilled in a champagne flute to allow the bouquet of playfully aromatic notes to be fully appreciated. Take a sip to enjoy a further cascade of striking and sensuous flavours alongside the carefree champagne-like spritziness. The long, dry finish is both refreshing and complex.

On the nose I am expecting this to quite vibrant and yeasty. Quite a light pour with good carbonation. Quite bready on the palate and drier than I was expecting. Not getting too much apple influence coming through.

Bottle shared at a tasting. Thanks Jay! Hazy copper with a soapy white head. Green apple, young grape, pear and alcohol on the nose. Tastes fairly simple. Not really sour at all, with a faint tartness. A bit too boozy on the finish.

750ml bottle. Cloudy amber with a frothy white head. Flavors are yeast, apples, citrus, pear, herbs and alcohol with funky and spicy notes. Harsh bitterness. Medium to full body, good carbonation, smooth texture.

Hazy golden. Foamy white head. Yeast & bread aroma and taste. Slightly sour taste but well hidden. Dry finish.
