Bubbles + Apples + Wild Yeast photo (16) Named after the ancient Greek goddess of beer, this is an equally divine Belgian-style saison with a copious amount of New Zealand hops, freshly harvested Somerset apple juice and wild yeast added to the mix. However, we like to take things just that bit further (it’s the Wild way!) — once bottled the beer undergoes a secondary fermentation with champagne yeast, giving it a brisk spritziness on the tongue. Serve chilled in a champagne flute to allow the bouquet of playfully aromatic notes to be fully appreciated. Take a sip to enjoy a further cascade of striking and sensuous flavours alongside the carefree champagne-like spritziness. The long, dry finish is both refreshing and complex.

22.1.2015. Completely hazy yeast-mix-looking. Aroma of yeast, lemon, sour apples, herbs. Taste has citrus, yeast, home wine. Saison-lambic mixture.

Keg at Bat. Cloudy pale golden with white head. Aroma is sharp, some apple, alcohol. Tastebif sharp apple and some alcohol. Quite hot and a little tart

Pours unclear yellow, small white head . Smell is floral , bit sour . Honey aspects as well . Taste is tart apples , very grassy .

It poured a hazy golden color with a white head. The aroma was of citrusy hops, malt and some straw. The taste was sweet with hints of malts, lemons and citrusy hops with a bitter finish. Wow.

Poured into a taster glass showing a bright lemon peel yellow with a finger of a white foam. The nose shows a lot of lime zest and notes of black pepper in between. The palate shows is very light bodied with a high carbonation. The taste shows a very strong apple and lemon forwardness with a slight tartness. There’s a slight champagne style yeasty bitterness surrounding the whole beer and in the background.

Keg at the broadfield, sheffield. Very slightly Hazy pale yellow, small lacy white head. Aroma is apples and rhubarb can get some sweet strawberry too. Taste is lovely, wild beer sourness but balanced with fruity sweetness and a good hoppy punch on the back of the tongue. Effervescent with a nice medium body. Excellent, best wild beer Co I’ve had.

Keg at the hanging bat. Pours golden amber, very sweet, a bit too sickly I think.

Appearance: this beer pours almost all head, the head is beige and settles into a very dense thick head, the beer is a hazy orange color Aroma: strong apple, alcohol, plum Taste: some pale malt, alcohol, plum even, very faint apple, has a bitterness to it as well, Palate: lively carbonation, light mouthfeel, bitter aftertaste, leaves mouth dry Overall: if nothing else this is a unique beer, I like it, the Apple Aroma made me a bit surprised when I actually tasted it because it has so much more than apple flavors, it is high in abv so drink slow, could hide the alcohol Taste better ---Rated via Beer Buddy for iPhone

Hazy pale yellow with a medium sized frothy white head. Aroma is tart citrus, green apples, rosemary, earthy, white pepper and grain. Taste is tart fruity, earthy, light bitter, light sweet. Finish is dry earthy and herbal. Medium bodied, average to high carbonation.

Quite enjoyable. A great medley of flavors. Some Belgian. Some fruit. Sufficient carbonation. Recommended. Quaffable.
