Bubbles + Apples + Wild Yeast photo (16) Named after the ancient Greek goddess of beer, this is an equally divine Belgian-style saison with a copious amount of New Zealand hops, freshly harvested Somerset apple juice and wild yeast added to the mix. However, we like to take things just that bit further (it’s the Wild way!) — once bottled the beer undergoes a secondary fermentation with champagne yeast, giving it a brisk spritziness on the tongue. Serve chilled in a champagne flute to allow the bouquet of playfully aromatic notes to be fully appreciated. Take a sip to enjoy a further cascade of striking and sensuous flavours alongside the carefree champagne-like spritziness. The long, dry finish is both refreshing and complex.

smells and looks just like cloudy apple juice, its effervescent on the tongue with the apples coming though straight away then the champagne yeast come through with a little alcohol burn, pretty good.

Aroma: yeast, pale grain, cider, fruity. Appearance: hazy gold, medium, Palate: sweets continue, yeast again, grain malts, bread and caramel, quite dry finish. Overall: excellent Belgian Strong Ale, fantastic aroma and palate. Bottle from Independent Spirit, Bath.

75cl bottle shared. Pours cloudy golden with a thick bubbly white head. Aroma is light sweet malts, lemon, light vinegar note that fades away after some time, some fruitiness, yeast, light alcohol. Taste is sweeter with more fruity flavors, lighter acidity, some yeasty funkiness, some booze. Very good dry bitter finish with sourish fruit aftertaste, maybe some green apples. Medium body, medium to high carbonation. Weird but very good.

Bottle from Whole Foods PM. Pours clear, deep gold with 2-finger, well-laced white head. Nose is hopcitrus, yeasty, champagney malt, fruit. Tastes tart, hoppy, citric, with notes of tangerine, yeast, pineapple.

5oz on tap at Cask Republic. Labeled Iduna Cru. Mostly clear golden orange color. Thin off-white head. Leaves good, thicker lace. Big belgian yeast, herbal flavor, spiciness. Some apple and pear aromas. Some mild bready sweet malt. Medium to bigger body. Smooth, kind of bright effervescent carbonation. Mild slick body, then dry finish. Moderate sweet taste, touch of tart, light to moderate bitter. 9% is surprising but believable. Solid belgian golden strong ale.

(Wild Beer Ninkasi) 750 ml bottle, white waxed, served into a teku, ABV 9% Bright light orange colour on the body, cloudy, with a tall and hick now-white head sitting on top, with very good retention, leaving light lacing behind. Floral aroma, some yeast, perfume, apricot, apple juice. Nice taste, again floral notes, some funky character, yeast, grass, nice fruity touches every now and then, barely notable acohol, I am not getting apples here. Medium thin body with a good carbonation.’Long dry finish. Nice and refreshing.

Draft at the Craft Bar PCB. I thought this might be a wild styled sour but it turned out to be a tasty Belgian strong ale. Sweet with a hint of lemon tart citrus and syrup. Very nice.

A cloudy dark yellow colour with an impressive and long lasting head of foam. The nose is funky with the usual suspects for the style...cloves, wheat. .then the apple juice comes into play. That adds the tiniest bit of tart fruit. The taste is also funky and has some spicy notes right up to the finish where the apple adds some fruity tartness but more distinctly, an extreme dryness. Light bodied with very active carbonation. I have to say after the first couple of sips, I considered this to be a potential drain pour. Palate familiarity finally set in and I was able to stick it out, so to speak. Iduna Cru still doesn’t fit in to my comfort zone so there will be no more bottles for me.

Bottled. Pours hazy, deep golden with a small, off-white head. Aroma of orange, lemon, apples, yeast and caramel. Sweet flavor that ends up dry and bitter. Medium bodied, oily texture and soft carbonation. A nice Ale indeed.

Bottle. Pours clear gold with creamy white head. Aroma is apples, honey, light malts, floral notes, and light funk. Flavor is apple juice, soft malt profile, light wheat, faint pear, and faint champagne notes. Medium body and heavy carbonation.
