Bubbles + Apples + Wild Yeast photo (16) Named after the ancient Greek goddess of beer, this is an equally divine Belgian-style saison with a copious amount of New Zealand hops, freshly harvested Somerset apple juice and wild yeast added to the mix. However, we like to take things just that bit further (it’s the Wild way!) — once bottled the beer undergoes a secondary fermentation with champagne yeast, giving it a brisk spritziness on the tongue. Serve chilled in a champagne flute to allow the bouquet of playfully aromatic notes to be fully appreciated. Take a sip to enjoy a further cascade of striking and sensuous flavours alongside the carefree champagne-like spritziness. The long, dry finish is both refreshing and complex.

Bottle from Beer Gonzo, Coventry. Cloudy orange in appearance, massive head! Aroma is if apples, some grapefruit and fruity yeasty funk. Taste is apples, orange, bitter spices. Not too sour, but pretty bitter. More beer then champagne, but I like the light spritzyness on the tongue afterwards. Good and interesting.

Bottle. Pours a hazy light yellow with a hint of green; the head is very high, fine grained, white, and lacy/pillowy. Nose is malic, acetic, vinous, savory , and funky; there’s some stinky cheese, some barnyard, and some fermenting fruit in there. Just a lot going on in the aroma department; on the tongue, though, it starts out straightforward with sweetness and Belgian yeast. On the middle of the mouth, though, it gets odd; there’s some saccharine and some weird medicinal stuff that never quite meshes. The finish turns dry and savory, with an overtone that approximates sharp Cheddar or Emmenthaler. This one’s a little weird for me; a lot going on that never quite meshes.

(Induna cru): Un nez fromagé et fruité classique aux saisons traditionnelles levurées. En bouche c’est moelleux avec une effervescence soignée et dans le profil de saveurs je peux pas identifier ni la pomme, ni les brett. Rafraichissant et bien exécuté.

I was Surprised to find this on tap at the ginger man in NYC, having previously only had Wild beer co in the UK. The beer was very enjoyable, but I could’t help but think it could have been aged longer. look forward to trying their beers more!

Pours a hazy bright yellow with fizzy white head. Wheat, tartness, spice, and some yeast on the nose; follows onto the palate. Finishes tart initially, dry, and then ends with a sweet note of the apples. Very pleasant.

Draft... Cajun Cafe Sour Beer Festival 2014... Murky yellow pour with a huge, frothy, white head. Fantastic retention. The bouquet is yeasty and bready, furnishing only hints of both fresh and dusty, musty, fallen apples. Light-bodied with tingly carbonation. Bittersweet flavor that – much like the aroma - only hints at apple. Leans a bit toward the bitter and dry sides of balance in both the flavor and finish. Not really all that fruity. More reminiscent of an English pale ale that provides only minor notes of apple. Moreover, instead of presenting notes of fresh or recently fallen apple, the fruity component in this ale is more like the apple-like esters that result from a lengthy stay in someone’s cellar. Also, this beer’s moderate to medium bitterness seems misplaced. It just doesn’t jive with the rest of what’s going on here.

Bottle from The Davis Beer Shoppe. Pours very hazy gold with a fizzy white head. Aroma is a bit yeasty/appley. Not brett, but maybe a relative. Med body, almost. Flavor is yeast and something clearly wild about it. Apple sort of gets lost. There’s complexity, but I really don’t have words to describe it. It took me a little time to adapt to the flavor, but I do like it.

Where: Babajan, Stockholm.
Appearance: Hazy golden colour with a white head.
Aroma: Citrus, grapefruit, hops, some perfume and a bit of funkiness.
Body: Medium body, low lively carbonation.
Flavour: Citrus, floral, tropical fruit, yeast. Strange bitter finish.
