How about a big, malty beer that evokes a good red wine and with a drier finish than you’d expect at 10.5% ABV?

Eschaton is a one-of-a-kind oaked all-malt Quadrupel (or “Belgian Strong Dark” if you prefer) that abounds with dark fruit and pit fruit flavors as well as earthy spiciness. Vanilla oak and warm viniferous notes assert themselves as the beer warms to reveal additional layers of delicious complexity. 22SRM

Suggested food pairings: Lamb, rabbit, duck, Stilton cheese, Belgian chocolate, tart fruit desserts.

Bottle. Murky deep amber pour with a small light cream head. Aroma is dark fruit, red wine - but not terribly strong. Taste is boozy right away, then kind of a blend (borderline muddled) of dark fruit, vanilla, more sweetness probably coming from the booze). This isn’t bad, but it just doesn’t seem to pull together all that well either.

UPDATED: JUL 20, 2015 12 oz bottle with a bottled on date of 12/2014 (revised and revised in July 2015). . Poured with a good sized, somewhat creamy tan head over a clear, dark, reddish brown body. Fine lacing. Aroma: over ripe fruits including banana, wet wood, and some clove and other spices. Flavor: too sweet with a strong sense of artificial vanilla, over-ripe soft fruits, dark dried fruits and mild bitterness [earlier review]. Dark fruit and light vanilla-oak notes. OK bitter-sweet balance. Feel: full bodied with medium carbonation. High ABV a bit too apparent O: I’ve had this beer several times and am always disappointed given how much I like many other beers of this style. Not bad, certainly, and will probably be much more appealing to some others.

Dark brown/amber with a small beige head, aromas of fruit, funk, and wine. Taste is smooth malt, phenols, touch of sweetness, and the finish is dry and clean. A great American interpretation of a quad.

Draft. This is a nice simple Quad with lots of nice deep sweet malt flavors. I paired this with a small glass of club soda, rich espresso, and macaroons. It was quite a combo.

Sample @ RBWG, Asheville. Brown pour with a small off-white head. Over-ripe banana mash. Banana bread. Some roasted earthy grain. Toffee. Strong chocolate flavor. Cocoa. Bananas fosters dessert. Burnt brown sugar. Pretty sweet. Medium body, soft carbonation.

Bottle shared by the Beer sommelier during RBWG. Pours a hazy dark amber brown color with a small beige head. The aroma and flavor have sweet caramel malts, banana, dark fruit, mild spices, a hint of a vinous note, brown sugar. Decent, not great.

Hazy dull light brown, aroma is malty lightly fruity, good hop balance, a light fruity tartness, spicy...I like this. The unfiltererd character is quality.
