Profanity Stout is the first in the Williams Bros ’chapeau’ series, in which we celebrate the skills of amateur brewers whose beers we think are exceptoinal and should be made available to a wider audience. With Profanity Stout we doff our caps to Peter and Craig, the ’Balls to the Wall’ brewing duo, who developed this recipe as students on the brewing course at Edinburgh’s Heriot Watt University. The beer is a blend of rich coffee and intensely fruity hop aromas on a base of full velvety malty mouthfeel.

Bit roasted Chocolatey aroma and pretty hoppy for a stout. Roasty citrusy taste. Creamy thick.

Tasted this at the GRAF, The Briggait, Glasgow on the 27th June 2014. Cask, gravity dispense. Pours a dull black in colour with a walnut coloured head. Strong malt in the fruity aroma with notes of bramble jam and roast grain coming through. Surprisingly thin, oily mouthfeel and poor lacing throughout. Strong dark malt complex gives a robust chewy roast grain base with dark, fruity hedgerow berry flavours mixed with dry elements of cocoa and mild coffee. Dry almost nutty element to the strong hoppy aftertaste which continues into the powerful malty finish and compliments the drier roast grain, leather and liquorice flavours present in the mouth. This was the best stout on offer at the festival and very popular. Highly recommended

Bottle at Gallow’s Bird, Espoo. Originally rated 07092012. Colour is black with small head. Aromas and flavours: Chocolate, coffee and roasted malts.

Bottle - pours deep dark red with a large dark brown, rocky head. Good retention and thin lacing. Aroma of grassy hops (which is sort of strange), roasted malt, coffee, orange and coriander seeds. Taste of roasted malt, coffee and spices followed by a medium/strong bitterness, some smoke and lots of treacle. Medium sweetness, heavy body, light carbonation and a pleasant warming feel.

Bottle 33 cl. Black With a shortlived lightbrown head. Aroma of malt, plumb, chocolate and coofee. Light bitter, medium sweet With a Nice chocolate endig. (20.06.2014) Bb 4/2015.

Beese (2560) - Watford, Hertfordshire, ENGLAND - JUN 26, 2014
Bottle from Beers of Europe. Poured a very dark brown, near black, with a scummy beige head. Strong aroma of ash, port, leather and fruit cake. Full, thick mouth feel. Complex flavours of oak, vanilla and bitter roasted malt. Finish was burnt malts, liquorice and caramel. Really was f*cking good!

Davros (2035) - Melbourne, AUSTRALIA - JUN 16, 2014
Pours black with a small head. Nose shows chocolate, roasted barley, nutty and toasty malt, oatmeal and a very faint liquorice note. Very nice, very complex. Equally rich flavours, with more cocoa, burnt toast, roasted barley and soft coffee. Carbonation seems very low, body feels a little watery.

ALLOVATE (2475) - Perth, AUSTRALIA - JUN 10, 2014
Trialled two vintages of this beer but little really wavered between them. Aroma is dominated by kelp and wooded, warming spice, malted chocolate and pepper. Both produced up a deepest, midnight brown with good clarity and a tidy, wafer of beige foam. 2014 is more malty, rounded and full whilst the earlier version has a dominant Ovaltine note and is thinner and receding. Both have great length and mask the alcohol well. Mild hints of aniseed, strapped leather, caramelised rhubarb and doughy chocolate. Woody, roasted malt base, touch of tar and generally on the sweeter side with an inkling of chocolate ganache. Both are great, easy drinking beers, but fall far short of what I expected. If I said f&*k you to anyone I’d expect I did it with a strong backbone. This one doesn’t have it!! (33cL, two releases - BBE 12/13, BBE 11/14, The Liquor Shed, Jandakot)
