Profanity Stout is the first in the Williams Bros ’chapeau’ series, in which we celebrate the skills of amateur brewers whose beers we think are exceptoinal and should be made available to a wider audience. With Profanity Stout we doff our caps to Peter and Craig, the ’Balls to the Wall’ brewing duo, who developed this recipe as students on the brewing course at Edinburgh’s Heriot Watt University. The beer is a blend of rich coffee and intensely fruity hop aromas on a base of full velvety malty mouthfeel.

Couleur noire, mousse beige qui disparait. Nez malt noir et doux chocolaté. Gout malt grillé et café avec chocolat puis forte amertume houblonnée. Bon corps. Fin douce puis amère houblonnée longue. Vraiment pas mal et assez inhabituelle

Pleasantly estery aroma nice roast. Black, brief tan head. Fizzy palate. Pleasant roast, drying hops do like the late finish the hops really hang around. Shame, way too fizzy.

Bottle from Appellation Wines. Pours almost black with brown head. Oily texture. Aroma is quite muted with sweetish roasted malts, liquorice. Taste is quitelight for the abv, somedryish bitterish roasted malts and chocolate. Some booze as well.

Very dark with small beige head. Smooth dark chocolate and coffee aromas with a little licorice and leather. Robust roasty taste with coffee, chocolate, treacle, butter and a little charred meat in the finish. The medium body and lower ABV (for an imperial stout) help strike an excellent balance between flavour and drinkability that gives it a solid point of difference. Impressive that it’s so full of flavour yet doesn’t seem watery due to the thinner body.

Nearly black with frothy light tan head. Fruity hop aroma. Strong roasted aroma with piney hop bitterness. Long, dry and bitter finish. Nice and solid. Good one.

Bottle, 7%. The aroma is refreshingly hoppy, has ashy notes as well as piney hop notes. Black colour, seems clear with a red shine. Big stable creamy light brown head. The flavour is roasted with a hint of smoke. Quite roasted, has some barley bitterness. The bitterness is a little rough, but the piney hops seem to balance it off a bit.

Bottle @ The Unholy Trinity Meets Again, Sønderborg. Pours hazy very dark brown with small light tan head. Clear aroma of roast and caramel malt, with notes of coffee and liquorice. Bitter, hoppy and roasty flavour with sweetish notes of caramel malt and hints of liquorice. Touches of coffee beans. Roasty and bitter aftertaste. Rather non-aggresisve for the style but decent.
