Profanity Stout is the first in the Williams Bros ’chapeau’ series, in which we celebrate the skills of amateur brewers whose beers we think are exceptoinal and should be made available to a wider audience. With Profanity Stout we doff our caps to Peter and Craig, the ’Balls to the Wall’ brewing duo, who developed this recipe as students on the brewing course at Edinburgh’s Heriot Watt University. The beer is a blend of rich coffee and intensely fruity hop aromas on a base of full velvety malty mouthfeel.

BOTTLE 33 CL from dcmchew. Thanks! Look: almost opaque black, beige frothy head. Aroma: hops, tropical fruit, dried fruit, some vanilla and licorice, very light roast for a stout. Taste: citrus tropical fruit hops on a moderately roasty and fruity black malt foundation, solid bitter finish. Quite a hop-accented stout.

Aroma: roasted dark malts, herbs, butterscotch. Appearance: nice dark color, thin beige head. Taste: low bitterness, roasted dark malts, coffee, roasted barley, quite dry and a little bit empty. Palate: medium body and low carbonation, roasted finish. Overall: Looks like a younger brother of a normal RIS. However not bad.

Tasted this at the GRAF, The Briggait, Glasgow on the 27th June 2014. Cask, gravity dispense. Pours a dull black in colour with a walnut coloured head. Strong malt in the fruity aroma with notes of bramble jam and roast grain coming through. Surprisingly thin, oily mouthfeel and poor lacing throughout. Strong dark malt complex gives a robust chewy roast grain base with dark, fruity hedgerow berry flavours mixed with dry elements of cocoa and mild coffee. Dry almost nutty element to the strong hoppy aftertaste which continues into the powerful malty finish and compliments the drier roast grain, leather and liquorice flavours present in the mouth. This was the best stout on offer at the festival and very popular. Highly recommended

This is very good; black, full bodied and oily, with a great balance between the dark fruit and roasted malt flavours, with a refreshing bitter finish.

Bottle - pours deep dark red with a large dark brown, rocky head. Good retention and thin lacing. Aroma of grassy hops (which is sort of strange), roasted malt, coffee, orange and coriander seeds. Taste of roasted malt, coffee and spices followed by a medium/strong bitterness, some smoke and lots of treacle. Medium sweetness, heavy body, light carbonation and a pleasant warming feel.
