Bottle:A dark red or brown pour. Aroma of malt and a cedar kind of woodiness. The flavor is very low key and surprisingly minor. A wood and sweet cinnamon mix. The palate is average. It is shockingly light for a beer over 10% abv. There isn’t much going on here. Drinkable but boring.

Bottle purchased at St. Charles’ in Boston; unsure of vintage or quality. . Poured a nice looking reddish-brown; murky with a minimal head. Very nice aroma; aroma of oak, candi sugar, fruit, toasted malt and dark fruit. Flavor was a bit disappointing; fairly complex, but just not that great. Same components as the aroma. Palate was soft; not much carbonation.

From a 375mL Bottle. Slightly hazy, caramel brown color with a thin head of wispy tan. Not much barrel character in the nose, but plenty of estery fruits - mainly strawberry. Sweet caramel and brown sugar malts form most of the malt aromatics, along with a smidgen of vanilla. Warming alcohols noticeable, but enjoyable and not harsh. I’d definitely like to see more of a yeasty presence, as this is a little simple and bready and seems to be missing some of the more interesting spice characters I enjoy in a good quad. Medium full bodied, lightly carbonated mouthfeel with a somewhat sticky texture. Not overly heavy, but it could use a bit more carbonation to lighten it up some. Fruity strawberry flavors up front with some malty brown sugar and caramel. Toward the finish, a light acidity grows, combining with the fruit flavors to form a distinct and excitable thimbleberry flavor. The fruity yeast and malt flavors are quite nice, but it could use a bit more spicy phenols, carbonation, and oak.

I wanted more from this. The aroma is complex, with lightly toasted malt, sourdough bread, dried apples, oak, licorice, and raisins. The beer seemed a bit flat; the carbonation just wasn’t as lively as one would expect from an abbey ale. Tastes of dough, oak, red cherries, brown sugar, fruitcake, and vanilla.

Bottle. Pours hazy tawny with a spare, fizzy, off-white head, diminishing with spare lacing. Aroma is heavy malt (bread, hay, straw), light hops (herbs, grass), heavy yeast (dough, earth, leaves) with notes of raisins, dates, and wood. Medium bodied, oily texture, soft carbonation, and a sweet finish. Long duration, moderate sweetness, light acidity and bitterness. This one hides the alcohol very well.

Dark amber ale with fast disappearing yellowish head. Sweet, syrupy nose with quite some hops. Brandy aroma, sweet bread, vanilla, English vanilla sauce for pudding. Sweet, near jam-like flavours, fruity (as red or dark blue berries); alcohol & fusels, vanilla, young oak and milk chocolate. Surprisingly light-bodied, alcoholwarming but nowhere overwhelming. Balance is a bit doubtful, and alcohol unbelievably hidden. Nice, if very sweet tasting beer. Oak is there but rather discreet. Another CK offering.
