COMMERCIAL DESCRIPTION
Bronze Medal Winner in the Indigenous Ales category at the 2013 Great American Beer Festival. Based on Franklin’s original recipe, which called for barley, molasses, and essence of spruce, our Tavern Spruce is as approachable and engaging as was the man himself. We source blue spruce clippings from a local organic farmer, steeping them in the kettle to create this one-of-a-kind deep amber ale. Originally brewed exclusively for Philadelphia’s historic City Tavern, Spruce is now available throughout the Mid-Atlantic Region.

I don’t know... I heard that you shouldn’t burn evergreen branches because the smoke is mildly toxic, so I found myself being very tentative each time I took a sip of this beer, brewed with Spruce tips. Pours with a body the color of an old copper penny, while the head disappeared before I could determine the color. Christmassy spruce aroma, almost flowery, and very little else. Flavor is very.... woodsy. Bitter, tart, herbal, floral, piney (I suppose, "sprucey")... overall interesting in a, "Here, try THIS" kinda way. Mild gut-burn, odd astringent linger of perfume on the roof of my mouth. Plus belching felt like I swallowed some toothpaste. I didn’t totally despise this. It actually rather "grew" on me. Reviewed from notes. This was poured into a pint glass. The appearance was a somewhat transparent golden yellow with a one finger white foamy head that quickly died and barely left any lacing. The smell had some spruce and light honey. The taste was sweet and alower some light spruce to come through. On the palate, this one sat about a light to medium on the body with a decent sessionable quality about it. Overall, I say this was a pretty good beer I’d have again.

Pours a clear orange/brown with a light lacing white head. Ginger spice dominates the aroma with hints of molasses and a bit of dark malt. Taste is moderate sweet with a resin and oil finish. Different and good

A strange, decently tasting beer. Has a coniferous quality to it though its different from your NW hops experience. Has a bite, but its sweeter.

From a bottle. Pours clear copper brown with a fizzy beige head. Tastes like soap, lavender, pine, grassy. Light/medium body and low carbonation. Smells like nutty lavender and pine, with light sweetness.

Bottle from sampler pack. Pours clear tawny brown with creamy beige head. Aroma is caramel and bready malts, light spice, light raisin, and some faint woody notes. Flavor is dry malts, light spice, faint cocoa, and faint hops; dry finish that seems to evaporate out of your mouth. Medium body and carbonation.

Poured from bottle into a pint glass Appearance – The beer pours a deep copper color bordering on a light brown/mahogany with a small off white head. The head has a good level of retention fading over time to leave a decent level of foamy lace on the sides of the glass. Smell – The aroma of the beer is rather odd with a spruce/pine smell mixed with a decently strong aroma of a molasses smell as well as some brown bread. A little bit of caramel and a light herbal smell are there as well rounding out the aroma. Taste – The taste begins with a molasses and brown bread flavor with some hints of a pine nature present. The flavor is rather sweet upfront with the molasses fading some as the taste advances to the end though. While the molasses fades, some very light caramel and darker fruit flavors of fig and plum come to the tongue. These fruit and caramel flavors are very light overall though, and don’t make up for the loss of the molasses sweetness. Spruce flavors really come on more toward the end, and with the slight loss of sweet and a slight increase in the roast tastes, one is left with a rather odd pine/herbal, brown bread and moderately sugary taste to linger on the tongue. Mouthfeel – The body of the beer is average side in terms of thickness and creaminess for a brew of 5 % abv. with a carbonation level that is on the slightly lower side. The body was OK for the odd mix of flavors, but a slightly higher carbonation level may have enhanced the drinkability and sweeter flavors of the brew a bit better (which were in my opinion the most pleasant). Overall – Nothing too spectacular here. The flavors never really meld all that well, with a kind of muddled flavor overall.

12 oz bottle. Tastes like the trees! The aroma is pine, molasses, caramel. A flavor of caramel, pine needles, cereal and light chocolate. Medium in body. An interesting beer.

This beer taste like Christmas. Smells like drinking beer under the Christmas tree. It has a malty aroma and appearance. Overall a nice beer.
