COMMERCIAL DESCRIPTION
It’s tough to describe the breakdown of it but we basically kept blending it into one of our smaller 10 barrel fermentors that we kept... until we liked how it tasted. But I would guess it’s probably around 30% barrel aged Sue, 65% sour Sue, and we did blend a little fresh Sue in (5%) to round out the aroma.

UPDATED: MAY 8, 2013 Bottle. Pours just about pitch black with a huge tan head. Interesting aroma of chocolate, coffee, cherries, smoke, caramel, a little bourbon, and light acidity. Taste is a clusterf*ck, tough to tell what flavor stands out the most, but it’s probably the smoke. A lot of roasted malt flavors with a good amount of sour mixed in. This tastes like something one would concoct from leftovers at a jtclockwork tasting. Medium-full bodied, well carbonated. Not for me.

Pours a dark brown color with garnet hues and a thin espresso head. Aroma is chocolate, cherry and light tartness. Taste is smokey and lightly tart. Medium bodied and oily. Pretty good!

So, I felt that this was an appropriate ’retirement’ beer. My beer journey began in Tennessee and even though I am miles away, my heart is still there. Traveling the state on sub-three-dollar-gas, trying every new offering from the handful of breweries. I saw today that Yazoo is installing two new 200bbl fermenters. Congrats to those guys, that’s incredible, keep it up. This beer was a cool experiment, having had a couple of the infamous August Sue’s at their peak they were at first crazy pedio buttery, then they were just crazy sour. This is an interesting blend, I get mostly the sour and smoke, the bourbon is a bit lost behind those other two. Still, hope to try some of the future Embrace the Funk stuff from Brandon and hope to one day see Yazoo as the Boulevard of the Southeast.

Bottle shared. Pours with a black hue and a small tan head. Aromas are of honey, floral, estery, lightly chemically, ethyl acetate, alcohol and leather. Flavors are of playdough, leather, sour, tart, earthy, lightly roasty. Medium vinous, light barrel character, medium carbonation, dry.

Bottle @ Crooked Stave Reserve Society bottle share, courtesy of joshclauss. Thanks! Pours a black appearance with a pretty small, brown head. Tart, acetic fruity, woody, light chocolate aroma. Mild vinegar, dark chocolate, cherry/raspberry, light smoky, kind of burnt flavor. Ok.

Bottle at Crooked Stave’s Final Release Party of 2012. Pour courtesy of Josh, thanks man! Pour is deep brown, almost black with a small brown head. Woody, raspberry, cherries, roast, and light cocoa in the aroma. Taste is toasty chocolate, cherry, raspberry, tart fruit, bready, and oak with a light alcoholic touch on the finish. Medium body with soft carbonation. Meh.

750 ml bottle poured a clear dark reddish brown with a lasting tan head. Aromas of bourbon, cherry, smoke, oak, roastiness and dark chocolate. Palate was mediuim to full bodied and smooth with a dry lightly tart finish. Flavors of smoke, roastiness, cherry, dark chocolate, light oak and light bourbon with a smooth dry lightly tart lingering smokey cherry finish.

One more RBSG 2012 rating unearthed from my notes! Aroma is fruity and tart, notes of various berries. Flavor is blueberries, red wine, smoked meat (rauchbier-like), salt, savory, ash, roasted malt.

Sampled at GonzoIllini’s Birthday Party (Western Springs, IL). Happy Birthday, Tony! Pours a richer opaque brownish pour, dark and rich, deep haze. Frothy big tannish head that lingers firm. Aromas are gentle roast, toast, and gentle cherry. Touches of tartness, bisc uit, toffee. Initial is medium bodied, firm toffee and toast, cocoa, and gentle coffee. Some touches of tartness, faint toast and cherry. Middle offers gentle toffee, some toast, cocoa. Backend shows carmelization, toast, carmelizarion, cocoa, toffee. Some oak, spirit. Ok. Not much sour.
