COMMERCIAL DESCRIPTION
Our Apple cider is a crisp, refreshing drop with a light sparkle and a dry finish. Because it is made in what is known as summer country, every single mouthful is slowly sun-soaked and probably a little bit windswept which tends to create something that is mighty refreshing. Also known as Zeffer Crisp Apple Cider.

Draught at Mikkeller Bar. Clear yellow colored with a fast disappearing white head. Fruity aroma of apples and apple peel. Fruity flavor of apples with notes of apple peel. Fruity finish.

Bottle at Capitol Cider, pours a clear pale yellow with a tiny white head. Nose is very dry, with a light champagne-like effervescence. Flavour is quite dry and sparkling, with very dry apples, with a light spritziness. Well-constructed, with a light crisp finish. Very nice.

330 ml bottle as "Zeffer Crisp Apple Cider" bought at foodGARDEN in D2 Place, Lai Chi Kok.

Clear very pale golden yellow colour; Razor thin head and residual soapy white foam which fades in 5 seconds; Very small lacing with active, very small carbonation; Aroma of apple wine, with apple peels, strong yoghurt tartness, light wood and strong tannic; Very light sweet taste of apple wine, with very strong yoghurt tartness, moderate carbo, light earth, light wood, light alcohol and fairly light tannic; Light body. Thin and fairly dry palate; Mouth feel is close to a dry cider but not quite - almost devoid of sweetness and strong tart impression, yet it still have some wetness and not at all boozy. Light touch of earth and barrel, but tannin isn’t strong at all. Okay… Fairly dry after taste. Tart and easy to mouth.

Comments: Not as exciting as the fresh-tasting Red Apple Cider, this one’s forte is tartness, near-zero sweetness and fair dryness. East to go down with fair amount of feel good factor here. Fair enough.

Bottle. Head is initially very small, fizzy, fully diminishing. Body is light yellow. Aroma is a light note of apple, hint of ammonia. Flavor is moderately sweet, moderately acidic. Finish is lightly sweet, moderately acidic. Light to medium body, watery texture, fizzy carbonation, lightly to moderately astringent. Surprisingly poor.

330ml green bottle. Clearish gold pour, fizzy white quickly dissipating head. Tart apple nose, relatively clean, some earthy notes. Falvor is light, slight vinousness, slight rotten, not ultra dry. Decent.

This is a refreshing beverage but not the most flavorful thing in the world. It looks like glass of carbonated apple juice which is basically what it tastes like. To it’s credit, it is not all sweet and gross like some sort of apple flavored soda and it doesn’t have any of the strange phenolic notes that can be a problem in some ciders. It is just a little bit tart and vigorously carbonated, which makes for a nice and drinkable beverage. It’s a good drink, I just wish it packed a little more punch.

Keg - Pomeroy’s, Christchurch. A clear, pale gold with minimal head but an obvious effervescence. Aromas of both red and green apples with a sour/sweet balance. Light to medium body, medium to full carbonation and a modest intensity though somewhat lingering tart finish. Firm, crisp and refreshing if on the predictable side.

Some fruit on the nose but not overly expressive in any way. Clean, crisp golden colour and nice acid through the palate. Really like the dry finish on this cider. The fruit comes through without the need for large quantities of residual sugar, even though the acid is quite high.
