South African Grenache red wine barrel aged

The Zymatore Project is our endeavor to create liquids of unheard flavors and aromas that destroy the boundaries of beer, wine, mead, cider & spirits. Using barrels of the highest quality and pedigree from acknowledged leaders in the wine & distillation crafts we take beers, meads & ciders to new and unexplored levels. What may seem like unlikely combinations of liquids & barrels are designed to create new flavors & aromas that transcend conventional definitions.

Draft at Proletariat. Pours a deep murky brown body with thin off white lacing. Aroma is super intense blend of wine, oak barrel, deep molasses, brown sugar, maple syrup and dark caramel candy. Mouthfeel is aggressive and tart with notes of sour barrel, oak, sweet maple syrup, molasses, caramel candies, wine and dark sour fruits.

Tap. Pours opaque brown to black with a small tan head and some lacing. Aroma is light with notes of coffee, chocolate and sweet tarts. Flavor is lightly sour up front, medium sweetness in the middle, notes of coffee, dark roasted malt, wood and citric tartness. Very interesting beer that becomes more balanced as it breathes.

Tallahassee, Fl - Fermentation Lounge - on tap. Dark black pour, khaki colored head, decent lacing. Nice sour aroma with some sweet tart candies and vinegar. Solid sour flavor with the same sweet tarts making their presence known, a touch of balsamic vinegar, fruity winey finish. Nice spritz to the mouthfeel. Pretty solid.
