wheat

A protein-rich grain used in brewing, almost always in addition to barley, intended to add texture and flavor to a beer. Wheat was proscribed by the Reinheitsgebot which forbade all grains other than barley in brewed beer. Despite this edict, wheat was and is still used extensively in Bavarian brewing. Besides wheat’s use in the German brewing tradition, it is also used in Belgian lambic and wit beers, and in American wheat beers.
