Fresh filet of Atlantic black dogfish presented over saffron infused creamed corn with micro bull’s blood and blood orange infused olive oil.
Paired with Dogfish Head Ta’Henket ancient ale, 4.5%
Aztec Chili
Coffee dusted beef flank steak simmered with Aztec cocoa, fresh chilies, and gigante beans crowned with spiced cocoa crème fraîche and cilantro-jicama slaw.

Frenched veal rib chop grilled to tender perfection and served over butternut squash hash garnished with stained glass spinach and pomegranate infused glace de veau.
