  got some Amadeus cheese at the Whole Foods a few days ago and wanted to learn more about it. Since I couldn’t find any information on the web, I sent the cheese people at Whole Foods an email. Here was their response:
At the very least, I wanted to know what country the cheese is from. Aren’t there some type of labeling laws that require them to list the country of origin? I’m not satisfied with that response.

If it’s imported I think they have to say something. They should also list the ingredients, such as milk type, salt, rennet etc. How the hell can they expect to sell a cheese with no information???

They did list the ingredients. I was just wondering if they have a big production facility somewhere making their proprietary products, or if they contracted another smaller producer.

It is Austrian in origin and is made in a large-scale commercial dairy. A touch benign for me, but a good value for the price. BM if you like and I can check with my importer to see if the non-proprietary version is available with any ease.

Amadeus cheese is from Austria. It is mild, creamy, with a similar texture to havarti. It has a buttery aroma and is somewhat sweet and slightly acidic. It is typically aged about three months, though when the cheese is older it becomes more salty and tastes like hazelnut. perfect with a brown ale. sorry on behalf of Whole Foods Market.
