y wheat had an OG of 1.082 and after todays sample it is 1.018. I assume it will be safe to bottle on sunday or monday right? I need a tutorial on how to calculate the FG.

At 78% AA you are probably fine to bottle soon, but with a big beer there is no need to rush things. When did you brew it? Did you rack to secondary? When did it reach the FG? How does it taste? How does it look?

Generally I won’t bottle anything over 1.070 within a month of brewing. It gives time for the yeast to clean up and drop out, and it gives time for the beer to mature a bit. When I started out, I bottled a couple big beers young, they turned out fine but the flavor was pretty variable bottle to bottle. These days (and this is probably due to a host of other process improvements as well) my beers are generally very consistent from bottle to bottle.
